His name is Siavash Ghomeyshi (Pioneer of Trance in Iran) who has composed most of the famous songs for Ebi, etc... He has a lot of good songs himself too. To name a few: Farangis, Alaki, Fereshteh, Ashegh, Yadegari etc.

I think that was an instrument called "OUD" . Santoor has much lower tone than the one we heard from the music.

@5:35 you're either referring too Santour or ghanun.. Santur is a shared Iranian also Chinese instrument (not whats used in this music video). Ghanun looks almost like a santour cut in half and laid down the same way, but played with fingers or a small peek. Also, its origin would go to Arab musical instruments althoughused in many Persian music. This is a keyboard they are playing with the sound of Ghanun.
