This was a fun one to make and made me appreciate my grinder more than ever.
The Finger Sausage turned out to by my mothers favorite of the month! The texture you are going to get on this one is incomparable to anything I have ever had.
It was fun to make and helped me understand the history and appreciation of sausage that has developed over the thousands of years of practice.

    Oh, I'm half Spanish and the modern traditional way of making blood sausages is to cut a PET bottle and use the neck as a horn and a funnel. I did try this method myself and it works really well with fairly soft sausages.

    Yup that may work better if you are working on your own. If I were to use my stuffer again i'd need a hand.

    I'm loving both the book and the video series. Somewhere online there's a video of two guys who make a hamburger with knives instead of a grinder. This is on my list to try.

    Old world Portuguese Linguica is somewhat chunky and there is even some gristle floating around too. Very few people know about this type of linguica, because over time the meat grinder has been the way to go. The meat can be way over ground and loss chunky texture has disappeared. So there you have it, thanks for the fine example of sausage art.

    I like sausage that are coarse like this one, seeing all the spices laying in between. When I make skilandis i cut it the same, and stuff in a 70mm fibrous. (You'll need a neighbor with a still to make it.)

    There is the skilandis again now im more curious. Yes the coarse texture was awesome on this one. haha well should be hard around here.

    How would you stuff casings without a stufferbor meat grinder n? Meaning if I was a total newbie . That sounds stupid . Lol thanks for the info . I love watching the videos . Keep up the good work !

    Why did you call that knife a steak knife if you brought that to my dinner table I would think you'd want to go to war the damn sword you know better than that that's a breakdown knife

    "Steak knife", aka "steaking knife" is a common term used in some places for knives used by butchers to cut steaks.
