Filling My Freezer With Homemade Freezer Meals | 7 Recipes for Breakfasts, Dinners, Cookies & More

Join me for a couple days in my kitchen as we work to fill our freezer with homemade freezer meals. These scratch made freezer meals make for easy and healthy meals in a pinch busy days. In today’s video we are making breakfast sandwiches, breakfast burritos, frozen smoothies, homemade frozen pizzas, pesto meatballs, and cook from frozen cookie dough.
Breakfast Sausage Recipe:
1 lb ground pork
1 tbsp red wine vinegar
1 tsp dried parsley
1 tsp garlic powder
1 tsp onion powder
1 tsp dried basil
1 tsp salt
1 tsp black pepper
1/2 tsp paprika
3/4 tsp chili flakes
1/2 tsp crushed fennel seed
1 tsp brown sugar or maple syrup
Avocado Oil Mayonnaise Recipe:

To reheat the Breakast Burritos or Breakfast Sandwiches:
Thaw overnight. Remove from parchment paper and heat at 350 for 10-15 minutes, or microwave for 1 minute.
From frozen, remove from parchment paper. Heat at 350 for 25-30 minutes, or defrost in the microwave for 1 minute, and heat at high power for another minute.
Frozen Pizza Cooking Instructions:
Follow cooking time and temperature of the dough recipe you are using and add 5 minutes to the cooking time. For the recipe I’m using, I bake at 425 for 25-30 minutes.

Pizza Sauce Recipe:

Pesto Meatball Recipe:
2 lbs ground beef
1/2 c oat flour
2/3 c pesto
2 eggs
Chili flakes
Mix ingredients together and scoop onto a baking sheet using a 2 tbsp cookie scoop, or form into 1 1/2 inch balls. Bake at 400 for 15-20 minutes.

The BEST Oatmeal Cookie Recipe:
1/2 c softened butter
2/3 c cane sugar
1/4 c brown sugar
1 egg
1 egg yolk
Splash of vanilla
1/4 tsp salt
1/2 tsp baking soda
1 1/4 c oat flour
1 1/4 c rolled oats
Optional add ins: 1/2 c raisins + 1/2 tsp cinnamon, 1/2 c chocolate chips, 1/2 c chopped nuts or 1/4 tsp freshly grated nutmeg
Cream together butter and sugar. Add egg, egg yolk and vanilla and mix well. Add salt, baking soda, oat flour, and cinnamon if using and mix well. Add oats and add ins if using. Scoop onto baking sheet using a 2 tbsp cookie scoop or form into 1 1/2 inch balls. Bake at 350 for 10-12 minutes until light golden. Remove pan from oven and tap gently against counter to help flatten cookies. Allow to cool on pan for at least 5 minutes before removing.
From Frozen:
Bake at 350 for 13-15 minutes until light golden. Remove pan from oven and tap gently against counter to help flatten cookies. Allow to cool on pan for at least 5 minutes before removing.

    When wrapping the burritos place at at angle , fold in the pointed ends at the end of the burritos then roll them closed. If that makes sense for you

    The best way to eat them is as a side/app. Get a pan really hot, blister them and dip and a garlic/lime aioli. 👌

    Love the fact you keep and use your bacon grease. I always have a large jar in my fridge. Especially for browning meats for stews etc. I have even used it for baking powder biscuits instead of butter or shortening. Great recipes!

    I add Southern Style hash browns (cooked separately) to my breakfast burritos. I cook sausage first, then cook my veggies in the same pan once the sausage is removed so I get all that flavor. Then remove veggies and cook has browns. I use Mexican Velveeta for the cheese, then freeze.

    Thank you for the breakfast sausage recipe! Where I live it’s not common for butchers or stores to sell preseasoned sausage. I can get my hands on ground pork rather easily, but definitely missed the flavor of sausage in recipes. Also am guilty of burning bread when toasting it under the broiler (like, half the time) 😅

    This is truly an inspiring woman, she is efficient and it is contagious. When she made the cookies ready for the freezer, I remembered that I haven't been able to order good chocolate for Christmas. Ended up on a site that sold chocolate as little muffins with chips inside!! I think they were called Reese's or something like that and then I lost my appetite. It sounds awfully disgusting, surely no one buys that? I think I will have to wait a few days before ordering 🤢 because luckily there is a lot of good chocolate.

    Please tell me HOW you keep your OVEN so clean when you cook so much. I love a clean oven (more than I should) but it's a lot of work (I have a kitchen aid). It has self clean but it does an okay job. Also thanks love your content as always.

    Hello! Thank you. Shishitos are usually mild, but every once in awhile there is one that has a bit of heat. Even then they aren’t super spicy.

    Awesome! You can either defrost and heat in the microwave or you can heat at 350 from frozen for 30ish minutes or thawed for 10-15 mins

    A Hint About Cutting Onions: Put the cutting board on the stovetop, turn on the fan, and slice/dice away without shedding a tear.

    Very nice info. Is that a cast iron pan you were cooking in? If so, what brand? What brand is your stove? stove top? I just got a new house, the stove had a warning, that the stove would not be under warranty, if I used a cast iron pot or pan.

    This one is an enameled cast iron pan from me creuset. I’ll update the description box with a link. Ours is a GE. I imagine using ours with cast iron would void the warranty but I still choose to use it and try to be very careful with it

    Thanks for sharing! Have you ever tried making the eggs in a muffin tin? Perfectly round pieces without having to cut them up.. ☺️ Also, may I ask why you call the meat breakfast sausage? Isn't it just a hamburger? 😂 Or is it truly something different? I live in the Netherlands so I really don't know if there is a difference or not.

    No I havent found that, but maybe it would be depending on the brand? Im not sure of the brand I typically buy, I just get it in bulk from our health food store.

    I just use Bob's Red Mill GF pizza crust and it freezes really nice. I am surprised that you don't have to use xanthan gum or anything like that in your cookies.

    I honestly don’t use any xanthan gum ever. The cookies still come out perfectly chewy and hold together great

    @@theresas709 with cookies I have had luck substituting 1:1 oat flour in place of all purpose. For muffins and quick breads I find they usually need more eggs. I have a few recipes on my blog

    Instead of using an egg scramble into a pan, have you ever thought about getting a large muffin pan and doing eggs that way? That way your eggs would be circular and raised up! I actually have an egg pan that actually makes eggs just like the two at McDonald’s in the Egg McMuffin I paid $22.95 for this pan. It has four eggs at a time. It’s actually got mold in it and not the silicone rings which do not work. I’ve used those many times and ended up throwing them out but the pan is amazing because it’s literally iron molded Specifically for silver dollar pancakes and things like eggs! 10:39

    I just find we are always struggling with storage space in our kitchen and I don’t find we utilize that type of thing enough to keep them around. I had something similar but it ended up making its way to the donations box

    @@abbeyverigin oh, OK! My house is from 1953. It’s never been updated because I rent it and the owner is not interested in selling but what I did was because my kitchen has a small space as well as I utilize vertical space by putting in 6 1/2 foot tall shelving systems into my kitchen I currently have 3+ a 4 foot shelving system as well to utilize that because again I don’t have a lot of storage space either, but I can completely understand. Thank you for the video I think it was absolutely amazing and very helpful.

    Is your house haunted? I kept hearing heavy breathing throughout this video and I would watch your mouth to see if it was you and it wasn’t. I looked in the shinny silver mixing bowl to see if someone was standing at the camera and I never saw anyone. Or was it the doggy perhaps?
