    Fabulous! Thank you for posting! Just one small detail. Honey is NOT vegan, so to say "...it's completely vegan!" is untrue. Of course, one could use date paste, which is the healthiest sweetener, if someone prefers that. In any event, I love the process of making it in the same container. How easy! I will take my yogurt maker to the thrift store, Lol...

    Great video - I just had to share that you can make soy yogurt from the store bought soy milk in the refrigerated section that has all the added ingredients- I’m not saying it’s better - but if it’s all you have it will make good soy yogurt. I cooked it to 180*- petit cool to about 100*- added culture then put it in my oven with light on for about 12 hrs - strained it - super thick and good. I only put this out there for people who can not find the plain - in my small town Wal-mart you can’t get the good stuff. I did drive an hour n half to a traders Joe to get the good stuff. Again, thank you for a great video.

  • @marlinebalbach6432

    @marlinebalbach6432

    +Edmond Matevosian Good questions! Adding more capsules does not make it ferment faster, what does increase the action is to keep it at 108' F, in a food dehydrator maybe. It could be ready in 8-12 hours if you do that, it also makes is a little more tart, which is what I really, really like!! Then I like to drizzle liquid honey on it!! Berries too! Good stuff! As summer approaches, if you save on AC like I do, the house gets so hot that you need to see if you put the capsule into the carton in the morning it might be done by the evening. When the yogurt is 'over done" it gets a little sharp flavor, not so bad, but if something else goes wrong it may smell off, or taste like bakers yeast etc. Happy experimenting and enjoy!

    It'll add a few more steps to the process, but if you're vegan, look into Pomona's Pectin. It's a low-sugar pectin that works really well. Pectins for traditional jams and jellies need massive amounts of sugar to set (like 4 cups!). Otherwise, you could use agar agar which is gelatin that's extracted from seaweed.

    Nubi Hairston If you keep adding a bit of agave and shake it up it can last longer than 10 days and even up to a month. Most people are not really consistent with feeding the yogurt. You can also add the last cup of your yogurt to a new batch of milk and it will culture the new batch overnight at room temperature, maybe a little longer if your nighttime temp falls into the 50s! Keep it next to a heater or fireplace or In a dehydrator if your house is too cold. If my yogurt gets too strong I don’t use it to start a new batch, I will just use another probiotic pill. Like I said before, the sharper, stronger stuff is good as a base for vegan cheese.

    The yeasty smell tells me something went wrong and you have bacteria growing in there but it is not the right ones! Better get the right probiotic. Sometimes the soy yogurt you buy has thickeners in it, these could be added after culturing the product and these could inhibit the good bacteria from continuing to proliferate. Get the right probiotic and you will be happy. In the winter, I put my soy milk in front of the fireplace and it is ready in 12 hours.

    Store bought yogurt uses gums and thickeners. This yogurt will be more like curds (a clumpy think liquid). Still, the smell should not be terrible. Perhaps you need to use more honey to ensure the lactobacillus plantarum are not enticed by abundance of protein in the mix and begin proteolytic fermentation instead of fermenting the sugars into lactate. I have had this happen occasionally and you will get a lot of gas being produced in the carton as well (methane, etc.).
