Falling for Fattoush: Julie Taboulie's Lebanese Kitchen ~ Public TV Series Episode 109
Julie is falling for Fattoush and you will be too! Her Lebanese peasant-style bread staple is sure to become your new favorite salad. This singular dish inspires Julie to visit a wonderful waterfall nearby where freshness fills the air and aspires her to make a light and lovely Lebanese meal. In today’s show, Julie brings you along with her as she surrounds herself in one of Mother Nature’s natural wonders before she heads back into the kitchen to create her fresh and flavorful family of dishes known as Fattat meaning to use “left-over flat bread.” This Lebanese peasant-style bread salad is anything but peasant-tasting and is full of sudden surprises. Exhilarating tastes and textures infuse with a variety of vibrant vegetables and herbs that meet a medley of mixed greens coated in a lemony and garlicky vinaigrette that is seasoned with tangy sumac spice. Then, this spectacular salad is tossed together with Julie’s homemade crispy and crunchy, toasted-to-perfection pita bread pieces that is sure to become your new favorite salad! Julie also introduces you to another member of the Fattat family of foods that also goes by the same name called Fatteh Hummus, which is a warm chickpea-pita-chip-dip bowl blend of chickpeas, yogurt, spices, parsley and toasted pine nuts layered with crispy pita chips. Since pita bread is a uniting theme in this show, Julie teaches you how-to make and bake your very own pita chips right at home with her Khebez Mahamas b Soomsoom. This looks delish! My mom makes it very similar; however, she adds purslane instead of watercress. That's great that it can be modified to your taste. Also, the tahini in the lebni, very different. We always add tahini to the hummus instead. But I love how versatile it is. Thank you!

I was taught the Gaza version which didn't have bell pepper (I don't care for raw bell peppers anyway)

That's not exactly Lebaneese Fatoosh we don't add garlic we add sliced onion and we make it with lemon salt lots of Somak no vinegar at all.
Live your show but why make it SO difficult to find your recipes? Not EVERYONE can afford to buy everyone's cookbooks to find 1 recipe...

Parsley’s are parsley’s, there’s no such thing as Italian parsley. Lol

there are two main cultivars of parsley, flat leaf parsley and curly parsley. The Flat leaf parsley is used exclusively in Italian cooking has more robust flavor. Curly parsley is less flavorful and used more as decoration mostly by professional chefs.

Why Big cuts of peppers nd tomatoes and cucumbers, Fattouche is a small cut salad NO black pepper in Fattouche NO whisking of garlic with any oil , it will give very bad taste of garlic, big mistake for Fattouche salad i love your toasting of bread And NO parsley in an Authentic Lebanese Cuisine Fattouche salad next time a totally different level for the Fattouche salad -------------------------------------- The fatteh hummus is a complete disaster, this has nothing to do with Authentic Lebanese Cuisine
