Depends on the kind of universities you want to apply to, and your chance of getting into it after getting a 320+. GRE is not the only thing a university looks at, so make sure you know about the opporunity cost of retaking the GRE exam. For me, I targetted a 330+, but I received a 327, and I went ahead with it. Really depends on the places you want to apply to and your overall profile.

I had multiple leadership, product experiences that I believe were the high points in my profile. I had some ML related projects too as it was aligned with my interests. Do those projects which align with your desired career path.
