I was there 2 years ago, there were no buyers in those shops and it hasn’t changed.

A good amount of sellers do, however it's always smart to just exchange your pounds for liras, have a few thousand in case you really have to pay using Turkish Liras

Most places do and euro, but you pay more than if you pay in lira, so I would change to lira for shopping
