Am I able to do this by hand as well? If so what stitch would I use in place of the sewing machine?

yes you can do it by hand stitching! it will take longer but will look just as nice. I would either use a small running stitch or a back stitch

you can use any kind of fabric, i use various fabric too : cotton and linen :)
