去街市見到啲白蘿蔔,
一棵棵好肥美, 又大又重手,真係好正 ~
於是今集我就結合咗肥美嘅白蘿蔔,
同「香口」嘅元素,

蘿蔔絲煎餅 White Turnip Pancakes
Ingredients
White turnip 白蘿蔔 600g
Dried shrimps 蝦米 20g
Preserved Chinese Sausage 臘腸 40g
Salt 鹽 5g
Green scallion 蔥花 50g
White Pepper powder 白胡椒粉 a pinch
Batter 麵糊
Egg 雞蛋 1pc ( 55g )
Granulated sugar 白砂糖 10g
Tapioca starch 木薯粉 60g
AP Flour 中筋麵粉 100g
Glutinous Rice Flour 糯米粉 40g
Salt 鹽 2g
Corn oil 粟米油 10g
Water 水 50ml
Chicken stock 雞湯 200ml

我估唔得,因為木薯粉係有煙靱口感,但豆粉或粟粉係冇煙靱口感。不過如果你唔鍾意煙靱口感但想個蘿蔔餅表面香脆啲,用豆粉或粟粉就啱啦。我只係同你分享我平時玩煮飯仔嘅經驗,有錯請泰山哥指正🙏

你啲蘿蔔絲咁大條真係唔需要用cookie cutter啦😂除非好碎嘅材料例如蟹肉碎之類咁用就啱啦😄

how much flour and dried prawns you put in sir i hope next time you add in the measurement atleast we know how much the quantity. trying to cook and follow your recipe,but no idea how much ingredients have to use.

不用再洗。加入不是很多鹽,而且部分鹽會隨蘿蔔水流走,加上蘿蔔絲會因鹽而有底味🙏🏻
