    I think you could do with a new mixer, maybe a stainless steel one, your old one looks like the paint is coming off and the chips of paint could fall in the prepared mixture, that being said your cakes do look delicious.😊

    It's called a mandoline slicer in English and most places that stock baking equipment have them. They're used for quick slicing of vegetables and fruits that are firm, such as strawberries, just don't forget to remove the calyx first ( the leafy cap at the top ) the model he is using is a commercial size one but you can get a variety of sizes 👍

    Vous chargez trop en fraise , et puis biscuit trop épais , encore des fraise pour un décors chargé , car la cette pâtisserie ressemble à celle des années 1970/1980 ! Faite dons un biscuit moins épais , et très léger , et fondant en bouche , avec une crème mousseline (crème jaune , crème fraiche monté au bec ) pour remplacer le fruit (fraise) faite donc une feuille de fraise gélifier , crème mousseline , puis recouvrir avec le biscuit léger en bouche , et pour décors une fine couche de crème fraiche légère un petit sucré , et pour finir faite un décors avec des fraise en sucre soufflé , et autour finir avec un décors très léger avec quelques pétale en chocolat ! Anciens Cadre en Pâtisserie français , maintenant en retraite , et pour en terminer soyer créateur ! Bonne fin de journée.
