Why is it alkaline hydrolysis when there is no water in the reaction? And from the definition you said "Hydro means Water"??

You have 2 types of esters, fat esters (esters with saturated carboxylic acids) & oil esters (esters with unsaturated carboxylic acids). Fat esters are hydrolysed by reacting with sodium hydroxide (NaOH). Oil esters are hydrolysed by reacting with methanol, catalysed by potassium hydroxide (KOH)
