For reliable, consistent results with recipes, a good oven thermometer is critical. When we used a high-tech digital thermometer to take the temperature of five different home ovens preheated to 350 degrees, some missed the mark by as much as 50 degrees. Here’s one big reason why: An oven’s internal thermometer only gauges the temperature of the location where it’s installed, which is necessarily in an out-of-the-way spot in the back, front, or side of the oven box. But these areas can be subject to hot spots or drafts that make their temperatures differ from the center of the oven. Only a good freestanding oven thermometer can tell you what’s really going on right in the middle of the oven, where most food cooks.
For several years, we’ve relied on our winning dial-face oven thermometer from Cooper-Atkins, but we’ve also noticed new models on the market and wondered if anything better had come along. We scooped up nine dial-face models priced from $4.63 to $20.94 to pit against it. (We avoided bulb models since we’ve found that their tinted alcohol can get stuck and give inaccurate readings.) Most of our lineup had the option to hang from the racks or sit upright. Either way, we wanted a thermometer that was easy to position and remove for a periodic reading. In addition to ease of use, we rated the legibility of the faces and, most importantly, the models’ accuracy. Finally, to assess quality control, we purchased four copies of each thermometer and ran the entire set through testing.

    A fair number of ovens can adjust the dial if you find it doesn't heat to temp. In other words, if you find it's consistently heating 25 degrees low, the service manual will tell you how to adjust the screw so you are turning it to the correct mark to make the oven heat to what it reads on the dial. This was standard "back in the day," I don't know if it's still a feature on new ovens. I've only come into the 21st century recently and my new range oven heats perfectly, so I've not had to find out. (Yay, gas Maytag!)

    What you didn't address and what those thermometers don't do is read the fluctuations in oven temperatures that only an electronic thermometer can do like the ThermoWorks.

    The trouble for me with this CDN model is that the lowest temperature on the dial is 150F. I use my oven's proof setting to incubate homemade yogurt and need the temp to be between 105-115F. I use the Taylor 3506 model that starts with a temp of 100F. It's between $5.50-6.50 depending where you buy it. I found mine at target but it's also available on amazon.

    My understanding is that your oven should run a little bit hotter than the calibrated temperature of an empty oven. This is because when you do put something in the oven, like a big turkey, the object will begin to absorb the heat, and the air around the object will stay consistently cooler than the temperature of the oven walls. The oven wall is where the oven keeps track of its temperature, so in practice, the air in the oven will be cooler than it should be if you calibrate it empty. This is why if you cook a double batch of something you need to adjust for temperature or cooking time, because the effective temperature in the oven goes down the more you put in. A standard way of calibrating an oven is to take the average of two situations -- first mark the setting where the oven stays at 350 when empty, next mark the setting where the oven stays at a decently steady 350 when you put the largest thing you'd normally cook (like a big turkey), then calibrate it so that 350 is in-between those two marks.

    +Erkdajerk ! No, your oven should run at the temp selected. If you have an item in there that is temperature-critical for the first 10-20 minutes of cooking, then recommended practice is to pre-heat the oven 25-50 degrees hotter than what it has to cook at, once you put the item into the oven you turn the temp down to the cooking temp. This keeps the oven hot, even while you open the door to insert the item. If you're cooking a dense food item like a turkey, its the cooking time that matters - adjust time for weight... never adjust temp for weight. What if I put something frozen in there? By your theory my oven should read 75-100 degrees higher than what I select.

    Marlana Harrison I don't mean to suggest that you should necessarily adjust the temperature depending on the size of the food. All I'm saying is that it's more practical to calibrate your oven with stuff cooking in it rather than only empty. When you calibrate it taking into account both when empty and full, you are effectively factoring in the heat capacity of your oven. You might imagine that cooking a frozen pizza will not be the same for a toaster oven versus a conventional oven, even if they're both calibrated empty. This is because the heat capacity is different (among other things). On the flip side, imagine if you had a huge room-sized furnace set to 350 and you a turkey in there. You can imagine it will cook faster as the temperature will not drop nearly as much as it would in a normal oven at the same temperature. If the temperature drop of the air surrounding your food was not significant to account for in calibrating the oven, then the convection feature wouldn't make a difference in cooking time, but it certainly does.

    Is it possible that what you want to measure is your oven's capacity to return to the set temperature over time? My old electric (really old!) always had a significant drag time in cycling back on to return to temp. It would hit the temp just right, but over the length of the cook time, it was dull in sensitivity to the amount of heat lost and returning to the proper temp. It would take up to 10 minutes more for a 30 minute recipe. That was irritating enough for me to replace it with a gas Maytag when I renovated, and it maintains heat so perfectly that I use the shortest time recommended on a recipe and it nails it perfectly every time. I LOVE that oven!

    I too have been looking for an accurate oven thermometer. Saw this video and checked it on amazon and now Im more confused than ever. This video is old, from 2015. Have to wonder if there is something newer and more accurate. Ive been trying to find something more current and Im finding good reviews for the Taylor, Rubbermaid commercial, and the CDN they mention here. No clue where Im going to go from here. There seems to be no definitive answer on the best oven thermometer yet

    The volume is better on this video. Still not great, but it is quite a bit better than so many of the other ATK vids. It's louder and clearer this time. I still have my volume up all the way and it should be blasting me out of my chair, but it isn't, it finally sounds just close to normal.

    Yeah, all the recipes say 400°F for 1 hour will bake a potato, but it takes an hour and a half in mine! I'm getting one of those, then I need to figure out how to calibrate the oven thermostat, because this is embarrassing!

    I have this model of thermometer, at last I know it is reliable.Anybody knows what is the hottest or less hot spots of an oven (not convection)? The lowest rack because is closer to the flame/heating element, or the upper rack because of the hot air going up?

    +rickthenailer -- While it's heating up, the lower section will be the hottest. Once the oven is preheated the lower element will cycle on and off, so the temperature will vary somewhat, but the upper section will average the hottest. (That's why you use the upper rack for browning gratins and such.)

    Don't let them fool you, this is a paid commercial, they have another video here on youtube from 2019 and the supposed "winner" is also the same one, but if you go to Amazon to check the reviews most people are angry because they bought the thermometer recommended in the video trusting what they claim and are very disappointed. I am glad I read the reviews in Amazon, I was going to buy it too.

    Erikk Friberg They do! My old range used to have a “dehydrate” setting that went anywhere from 95º to 150º. You could set it to 100º to proof yeast dough in the winter, when indoor temperatures fluctuate so much.

    999kgb in theory, shouldn’t you be able to test your oven at a higher temperature and use that to figure out how accurate you oven is? (If your oven works well at 250-400 then it should probably also work just as accurately at lower temps?) This is just a tool to how well your oven works compared to what the temp settings are supposed to be.

    +chef mike -- I bought mine at a restaurant supply store so there was no shipping charge, but for those who get mail-order I'd suggest getting together with some friends and buying more than one at a time; that way the per-item shipping cost goes down.
