When it comes to smoking prime rib on a pellet grill its super easy. Start out with a nice cut of prime rib. I used a 5.5lb boneless prime rib roast for this easy recipe. I tied it super tight to ensure that it held the shape that I wanted. I used duck fat spray ( amzn.to/3phuXml ) as a binder, then I used the Spiceology Prime Rib Rub ( bit.ly/3wZW85B ) and generously coated the boneless prime rib roast. I then stuck a few strips of fresh rosemary under the twine and now its ready for the smoker.
For this cook I wanted to use a pellet grill, so I used my Camp Chef SmokePro SG30 which I set for 225F. At this temperature we are usually looking at around 40 minutes per pound. I placed the prime rib onto the smoker and began basting it with garlic and rosemary infused butter once the seasoning appear to have adhered to the surface of the prime rib. I continued basting every 30min until the internal temperature reached 112F. At this point I removed from the grill and covered with foil. I cranked the Camp Chef Pellet Grill up to 450F and returned the prime rib to the pellet smoker once it reached 400F. I seared at this temperature until the internal temperature reached 125F, removed it from the camp chef and covered it and let it rest for 30 minutes. Now its time to cut into some nice thick slices and serve!
It doesn't matter what kind or type of grill that you have. From a cheap grill all the way up to a Lone Star Grillz... Rec Tec, Yoder smoker, Pit Boss, Traeger, Char Griller, Masterbuilt Gravity Series.... Doesn't matter! This recipe works for all!

    Hi Andrew, Thanks for the advice on cooking this prime rib. I cooked one today, which came out great. I do have a question, why do you take the roast out of the smoker while waiting for the temperature to get to 450 degrees? My outside temperature today was 35 degrees and it took quite awhile to get to 450. I left it in while it came up to temp. I haven't got a cover yet as they are out of stock. Thanks Phil

    I pull it off because I don’t want it to continue to cook as it approaches the sear temp. I’m looking for the high temp the finish it off and seal the deal on the crust

    I'm smoking two 7 lb prime ribs for Christmas. Should I base my expected cook time at 40 minutes times 7 lbs or 40 minutes times 14 lbs? I know internal temp not time is the key but I'm trying to determine when to put meat in smoker to be done at dinner time.
