Ep.05 Mee Goreng Mamak

This Mee Goreng Mamak that both Mummy Jah and I cooked with Fortune Food Manufacturing @fortunefoodmgsg is a reminder to appreciate simple good food.
Back when mom was growing up in the kampung at Jalan Eunos, she remembered having S$1 Mee Goreng Mamak often as they did not have enough money to buy groceries. They would eat the Mee Goreng Mamak with rice and egg, and one packet can be shared among four people.
One of the key ingredients is the tofu which we like it a lil bit crispy on the outside yet soft inside. We used Fortune Chinese Tofu with Omega 3 and Hokkien Round Noodle for this recipe.
Servings: 4-5 | Prep time: 45 mins | Cook time: 30 mins
👩🏽‍🌾 Ingredients
1 pkt Fortune Chinese Tofu with Omega 3, diced
1 onion, sliced thinly
3-4 tbsp homemade sambal
½ cup beef, thinly sliced or your preferred meat
½ cup prawns
About ½ cup water
1 pkt Hokkien Round Noodle
2 tbsp tomato sauce
1 tbsp salty soy sauce
Salt, to taste
1 bunch chye sim (stalks and leaves to be separated)
250 gm bean sprouts
2 tomatoes, cut into quarters
Spring onion, chopped
Parsley, chopped
👩🏽‍🍳Directions
1. Heat vegetable oil in the wok. Fry tofu pieces and stir gently; set aside.
2. Sauté onion slices over medium heat for a few mins.
3. Add homemade sambal and mix well. Add meat and prawns; allow them to cook slightly before mixing with the sambal.
4. Pour water, followed by the chye sim stalks and mix well.
5. Lower the heat, and add the chye sim leaves and noodles. Add the salty soy sauce, tomato sauce and salt. Mix gently.
6. Add the tomatoes and fried tofu; stir gently so as not to break the tofu pieces.
7. Finally, add the beans sprouts and mix well. Top with chopped spring onion and parsley. Can serve the Mee Goreng Mamak with fried shallots and sunny side-up egg 🍳.
