Ep.04 Japanese Chicken Curry

Decided to cook our favourite Japanese Chicken Curry 🍛 for tonight's dinner. this recipe is courtesy of Just One Cookbook 😊
So, here's the recipe for those who wish to try this out.
Servings: 6 | Prep time: 1 hr | Cook time: 40 mins
👩🏽‍🌾 Ingredients
2 big onions
2 carrots
2 potatoes
1 tbsp minced garlic
600 gm boneless skinless chicken meat
Ground ginger, to taste
½ tsp salt
Ground black pepper, to taste
1 chicken stock cube + 4 cups water
1 cup water
1 box Japanese curry roux
1½ tbsp light soy sauce
1 tbsp tomato ketchup
1 tbsp honey
👩🏽‍🍳 Directions
Heat oil in the pot and sauté the minced garlic and onion. Add the chicken to the pot, dash ground ginger, salt and ground black pepper. Stir till the chicken is cooked.
Add carrots and mix well. Pour chicken stock and allow it to boil. Add potatoes and allow it to boil again. Remove as much scum with a strainer.
Add Japanese curry roux and mix gently. Cook for about 5 mins, before adding light soy sauce, tomato ketchup and honey.
Serve this with a bowl of Japanese rice and sunny side-up egg 🍳
