Enjoy Nicola's Sicilian pizza called sfincione di Bagheria! | Pasta Grannies

Sfincione di Bagheria are crunchy, goey, savoury, thick-based pizza. And we've got a 'Pasta Grandpa' this week to show us how to make them: meet Nicola whose recipe is below. In season he uses a fresh shallot called scalogno; obviously this is tricky to find outside Italy, so the next best thing are fresh (green) onions, which are also called scallions in America and spring or salad onions in the UK. And of course, if you only have red, white or brown skinned onions, use them instead. Try and find fresh onions for the breadcrumb mixture.
For the sfincione dough: 1 kilo of semolina/semolo rimacinata flour, 10g fresh yeast 20g of sugar 24g of salt, 24g of extra virgin olive oil. 700ml water
3kg of onions, peeled, finely sliced, 150ml olive oil, 150ml water (add more if needed)
For the other topping ingredients: 100g anchovies, 500g primo sale cheese,
one loaf/1 kilo fresh breadcrumbs, 300g grated caciocavallo cheese, 1 teaspoon salt, 75 ml olive oil (more may be needed, depending on your breadcrumbs) and 3 teaspoons dried oregano, 3 green onions sliced.
These quantities make roughly 5 sfincione

I've never heard of this and it is so interesting and desirable. I noticed Nicola's palms were reddened from all that vigorous "walking of the dough", he really puts his heart and soul into it. I must try to make this!!! I hope that this culture of hardy work ethic, the keepers of taste, older traditions and beautiful non-pretentious people in any culture live for many more years, they are our last salvation to the good life. I find such solace watching these videos.

He reminds me of my 7th grade science teacher, Mr. Lovan, who was proud of his Italian heritage, and used to share stories of his trips to Italy and his experiences with real Italian pizza pies...

I've never wanted to eat anything from Pasta Grannies more than this!!! We all should have an oven like that in our homes. Such an unusual recipe for a pizza dough. Thank you Vicky & team for another great episode. One can never have enough videos of pizza being made.

Haha, that's because sfinciune is not pizza! My family makes it too, but ours is a bit different from this Bagheria style.

Nicola is a man after my own heart !!! This was such a wonderful video. It’s such an unique “pizza” recipe but seems to have all of the umami you could want or ask for. I truly enjoyed this video and will attempt to recreate this for my houseful minus the pizza oven though 😿. Fantastic video!!

Hi, I live in Sicily, in a small town called Terrasini, near Palermo. We have everything here to live very good, like the best food, historycal city, best beaches an seas, and peoples who cared when someone come here to visit our city. This is a real poor recipe, but extremely tasty. I love my land, our typical dishes, and everyone think the same, are welcome here. Who aren't never come here : " come on, we are waiting you, what are you waiting for?" :) ❤️

I've never been a fan of anchovies, but this is a whole new level of food, looks amazing
My family is from Palermo and we make Sfincione almost the same way but we add tomato sauce. I didn't know this version, I have to try it someday.
It has come that time of year when watching Pasta Grannies creates not only food longings, but, weather envy as well, for those of us in northern N. America. Sigh. That pizza looked so good, and, you face said it was divine! Have you had pizza from coal fired oven? I've not had better here. Would imagine the Italians make it even more amazing.

If your North America home is near Chicago there's 2 Coalfire pizzerias there We made a trip in to the Gran Avenue one after seeing it featured on Check Please Also an Italian Bakery and grocery down the street No sfincione though!

I am from this town and Bagheria's sfincione is something I really miss since I am living abroad. I prefer the classic one (without ricotta). Just tuma cheese, onions, anchovies and bread crumbs.

My family were all born in Bagheria, I was the first generation to be born here in Queens. I LOVE sfincione! I've been there many many times. It's been a long time and I miss it SO much!

I can't find California style where I am in Washington State. I once got held up at gunpoint in Hollywood and had a $20 bill in my sock so I ate at Spago which is Wolfgang Puck's restaurant. I had sun-dried tomato and feta pizza.

There is California style pizza. Detroit, Philadelphia, Pittsburgh, Chicago, New York style. You can get all of those in Los Angeles. I feel this recipe featured here, is definitely a style of pizza and I like I said would eat one and then another before bedtime as a snack!

Sitting here and salivating like…Anchovies on cheesy, oniony, herby pillow dough is the way to go. It’s filling, but I’ll risk it. Man, I wish I knew Italian (not just have it in my DNA) so I could directly communicate with this generation (which would be my grandparents’) because so much of that knowledge is lost even with the following couple.
