It's actually a bit weird. Opening day was the day I was dreading the most because of all the pressures and anxiety but now that it's over, it's bittersweet. After all that has happened, I expected myself to be resentful and regretful, but I now feel an even stronger sense of emotional bond to this project like I never had before. I love how no matter how scary or difficult it is to commit to what you do, you do it anyway. Even when you’re not sure. Even when you’re family isn’t sure. I’ve worked in fine dining for decades, it’s really fun to watch you guys learn… great foundation, just keep building, you’ll get there. My best advice would be to remain open to new things and change. With a tasting menu, feedback will come quickly and often 👍 I would recommend consulting with a strong FOH leader for sequencing service and polishing details.

So impressed by Kevin in this video! He did such a fab job and took that criticism well.

I felt every emotion alongside her, the excitement, the nervousness, and even when she cried. Congratulations Dooby!! You finally did it! We're so proud of you❤

I love that you showed your emotions at the end. Honestly, I know you’ve been holding that in for so long because I know how stressful it is to open up a business and for the landlords to make it difficult. Then you doing so much renovations and then especially the clashing with the boyfriend doesn’t help at all, so I know that cry at the end for such a great relief, knowing that it was all worth it and then from here on out it’s gonna get even more better. We love you dooby!!

You always hear and see those places run by couples or family, but to actually see the behind the scenes of it for the five past months, to see it finally in action in this video, and to hear you honestly talk about the struggles of it have made this series one of the best things I’ve ever watched. I am so proud of Kevin and I’ve known him through the screen for just a few months, I cannot imagine your pride. Fantastic! Thank you, and thanks to your kickass team!

That’s what I noticed too during their mock dinner service. I think if they consult with a professional restaurant manager they would have a very clean steps of service and serving etiquette down to a T.

The restaurant business is a tough gig and often consists of hours of thankless, stressful work that goes unnoticed by the customers, but if your heart is in it, that outweighs everything. Congrats Tina & Kevin and the team! Seeing you and Kevin in action at Mija in the flesh was such an incredible end to my trip. It was just the cherry on top. Even though I couldn't get a reservation before I left, it gave me so much happiness to see all your blood, sweat and tears come to life in the form of Mija and seeing the restaurant full of people was enough to make my trip. Thank you for coming out to say hi to me even though it must have been so busy (I was contemplating whether or not to come in and say congratulations because I didn't want to disturb the flow of the restaurant but you were so lovely about it.) A little advice on 16:10 Planks in shoe storage should be at an angle (lower at the back of storage, and also with a little space for drainage), so in case if they are dripping (especially in winter or rain season), water will run not on shoes that are lower, but towards back of closet. Putting cloth underneath is a neat trick too, but it must be dry before putting boots on it. And, of course, congratulations!

While there were some moments/plans/steps I didn't personally agree with as a viewer, I am still very very proud of your journey and what you have achieved.
