In this context JIT means just in time compiling or more accurately just in time recompiling. For emulation this is tooling to scan the emulated games executable code and spit out native (to your platform) executable code to do close enough to the same thing. This is in opposition to the approach of having a software machine to do the same thing as the emulated CPU, which is generally much slower, but possible to do more accurately (so emulators of older sytsems tend to follow this approach). There's no technical reason you couldn't ship an IOS app that does JIT but Apple has a blanket policy ban on apps that can run code from content. This dragnets stuff like Python and plugins.

The issues with open source aren't guidelines. There's a license and you have to comply with it or you're violating copyright law. This isn't complicated, and many open source licenses are extremely easy to comply with, but the lesson is read the license of code you want to use, and comply or don't use it.
