Based on our Pasilla Mixe chili spirit Ayuuk, COMBAT is a riff on a Hanky Panky, a cocktail created in the early 1900s by Ada ‘Coley’ Coleman, the first and only female head bartender of the American Bar in London. Cocktail connoisseurs will also notice the influence of the Martinez through the addition of Maraschino.
A cocktail originally made by a woman, twisted by a woman for International Women's Day. Margot describes it as “strong and smooth" just like COMBAT, her bar located in Belleville, Paris.

ABOUT AYUUK:
The smoky Pasilla Mixe chilli is the hero here. We source it directly from Mixe farmers in the mountains of Oaxaca, Mexico, and macerate it in a spirit made from Danish heritage purple wheat and Pilsner malt. After distillation, we blend the most desirable cuts. This blend is then rested in a sherry cask, allowing the flavors to infuse and mature with each other, giving a smooth, distinct and savory finish.
