What Davies loves the most about Italian dishes is how they can remain unchanged over centuries. Recipes for what were considered to be peasant dishes hundreds of years ago are still enjoyed throughout Tuscany today, now as family staples. Cooking these century-old plates helps Davies connect to the environment around her, and fully immerse herself in the Tuscan land.
