    Guards don't work well with everything on a mandolin. That said, a guard or cut resistant glove should be used. And most importantly, pay attention to what you're doing - you can just a easily remove a chunk when using a knife.

    Thanks Jon. The taste of fennel by itself can be intimidating but pickling looks to be a good way to curb the intensity a bit. Thanks for the suggestion. Will try with a fish entree I have in mind. Cheers

    I love raw fennel in salads, it has that beautiful liquorice flavour and I like that with sliced pear and some other vegetables, but, this sounds really fun.

    I would use kevlar injury prevention gloves when using a mandoline to reduce the terror factor.

    @jonkung 🤗🤗🤗 they are all different and have some situations where one may be more ideal than others. E.g. I was an earlier adopter of stevia in herbal teas, but I can't stand it in my green shake powder. Or I baked with Splenda for diabetic friends, but never added it to cooked/savoury foods... I was so surprised to see you use (I think?🤔) a sugar alcohol in a pickle. I'm wondering about the chemistry and I'm intrigued about it supplying the sweetness (onion pickling season is coming for me lol)

    I haven’t seen them around the farmers market but brown buttered sautéed leeks mixed with pasta is lovely.

    If you haven't done it yet- leeks and chinese sausage stirfry are also very good! I used regular leeks since chinese leeks were unfindable and it was still delicious.

    There is a medieval recipe for leeks and mushrooms. They are sliced and boiled in stock with saffron and other spices. Every interpretation of the original recipe is a little different, but a mixture of black pepper, nutmeg, and coriander would be good.
