In my book its given that the baryons are composite particles such as nucleons. And u also said that nucleons are baryons But previous u said that nucleons are composite particles made up of quarks. So here u r contradicting ur own points. So, baryons shouldn't be elementary particles

Mass is related to a particle's interaction with the higgs field. Just because a particle has mass doesn't mean it can't be elementary particle.
