    We’re some of your shrimp partially cooked when you dumped them in the water? Some of them were gray and it looked like some of them were already red. Fantastic video, Joe!

    Joe, I’ve got an idea for an experiment I would like you to consider. I vacuum sealed a raw chuck roast recently. I wanted to tie it up with butcher’s twine, but I didn’t have any so I used rubber bands after I vacuum sealed it. I threw the raw roast, wrapped in rubber bands into the refrigerator because it was late and I decided to start a sous vide bath for it the next day. I was really surprised by how much juice the rubber band squeezed out of the raw roast overnight. They were probably a little tight. We all know that cooked meat won’t reabsorb liquid. What abut raw meat vacuum sealed in a bag with a marinade using a high quality chamber vacuum sealer like you have. I’m wondering if the natural liquid that’s squeezed out of the raw meat is discarded, can it be replaced by a marinade under vacuum. I would try this myself, but I don’t have a vacuum sealer yet.
