Easy Smoked Chicken Wings | Chimichurri Smoked Wings On A Pellet Grill

In today's video I am cooking up some amazing and delicious smoked chimi wings! Now, I absolutely LOVE smoked wings, but if you have never experienced the delicious joy that is chimichurri sauce, you've been missing out. Originating from Argentina, chimichurri is a sauce that is not cooked, and is used in cooking or on grilled meat. On grilled meat is truly where it shines! It is unbelievably fresh tasting and just amplifies your grilled meat. I enjoy chimi on a tri-tip, but it is also absolutely amazing on grilled chicken, or in this case, on crispy smoked chicken wings. The cook on this is very straight forward, I used a pellet grill, but you can use any cooker following the recipe and temps below. I can not recommend trying this recipe enough, it's absolutely AMAZING!

| Ingredients |
-Chicken Wings
-Ash Kickin' BBQ Honey Chipotle Rub (link below)
-Tailgater's BBQ Party Rub (link below)
Chimichurri
-1 cup chopped Italian or flat leaf parsley
-1 cup chopped cilantro
-4 cloves fresh chopped garlic
-1 large finely chopped shallot
-2 teaspoons dried oregano (If using fresh oregano, use 2 tablespoons)
-1/4 teaspoon red pepper flakes (or 1 finely chopped red jalapeno)
-2 tablespoons red wine vinegar
-1 tablespoon lemon juice
-1/3 cup olive oil (You will likely need to add more, but start with 1/3 of a cup. I ended up adding another 1/2 cup and it was perfect after it rested in the refrigerator while the wings cooked)
-Coarse black pepper (to taste)
-Kosher Salt (to taste)

Prep:
1. To prep the chimichurri sauce, combine all the ingredients in a large bowl, mix well, and refrigerate until the wings are ready. After the wings have cooked, taste the chimichurri sauce and adjust flavors to your liking. (Fresh chimichurri sauce can be refrigerated for 2-3 weeks, but I typically keep it for about a week, it's also usually gone by then). You can make this sauce in advance.
2. Season the chicken wings with a light coat of Party Rub followed by a medium coach of Ash Kickin' BBQ Honey Chipotle rub.

1. Set the temperature to 325º F.
2. Put the chicken wings on the smoker skin side down and let cook for 15 minutes.
3. After 15 minutes, flip the chicken wings and let them cook for another 15 minutes.
4. After another 15 minutes, flip the chicken wings one more time and let them cook for 15 more minutes.
5. After 45 minutes, the chicken wings should be 190-200º F. At this time, remove them from the cooker and allow them to cool slightly before tossing in your chimi sauce.
6. After you've tossed the chicken wings in your chimichurri sauce, eat and enjoy the delicious, crispy, and fresh tasting smoked chicken wings!

    I do it for competitions, just don’t let it go too long or they’ll be salty AF. And watch the salt content on your rub if brining
