Easy Rotisserie Chicken Enchilada Skillet

One Pot Chicken Enchilada Skillet
-meat from 1 rotisserie chicken
-3 Tbsp butter
-1 1/2 cups chicken broth
-4 Tbsp tomato paste
-1 cup sour cream
-4 ounces cream cheese
-2 tsp garlic powder
-1 tsp cayenne pepper
-1 1/2 Tbsp chili powder
-3 Tbsp smoked paprika
-2 tsp ground cumin
-1 cup shredded cheese
1: Remove the chicken from the bone, and chop into chunks. Set aside.
2: Melt the butter in a skillet over medium heat. Once the butter has melted, add in the chicken broth.
3: Stir in all of the spices, and cream cheese.
4: Bring to a simmer, chopping the cream cheese into pieces to ensure it incorporates itself into the sauce. Using a whisk, whisk the sauce until smooth.
5: Add in sour cream. Whisk well.
6: Gently stir in chicken.
7: Top with shredded cheese.
8: Place lid on skillet, and let simmer for 4-5 minutes.
9: When the cheese has melted, serve on tortillas.
This is a quick meal for a busy night. If you want to make standard enchiladas using this filling, put the filling on your tortilla, and roll it up. Spread your favorite enchilada sauce in the bottom of a baking dish, then add your tortilla rolls. Top with a little more sauce, more shredded cheese, and put in a 400° oven until the cheese has melted and the sauce is bubbly.
