Fast and Easy Apple Pie Recipe

(PREHEAT OVEN TO 400)
INGREDIENTS (Yield 12 Mini Pies)
Filling
- 6 Apples (about 3lbs)
- 1/2 cup of Sugar
- 1/2 cup of Brown Sugar
- 2 tsp of Cinnamon
- 1 Stick of Butter
- 1/2 cup of water
- 3 TBSP Corn starch
- 2 TBSP of Lemon Juice
Dough
- 2 Boxes of Puff Pastry Sheets (7$ each … I KNOW!!)
- 1 egg (Egg wash)
- 1 Cup of Brown sugar
- 1 Tablespoon of Cinnamon
- 1 stick of melted butter
STEPS
FILLING
- Peel all 6 apples
- Cut Apple across each side leaving the core and than dice said pieces into 1/2in cubes
-Set apples in pan (stove off) and cover apples with 1/2 cup of sugar, 1/2 cup of Brown sugar and 2 tsp of Cinnamon than stir
- Let apples set for 20 to 40 mins (longer the better)
- Next add 1 stick of Butter and set stove to medium low heat
- After that grab a measuring cup with 1/2 cup of water and add 3 TBSP of Cornstarch
- Stir with a fork until Cornstarch is dissolved and than add too pie filling
- Next add 2 TBSP of Lemon Juice and stir
- Simmer for 20 mins while occasionally stirring it (or until Apples are nice and soft)
ASSEMBLING PIES
- First Grab one box of your puff pastry and pull one sheet of dough out
- Next lay out dough and cut it into thirds than cut in half ( you should have 6 rectangles)
- Cut diagonal holes in 3 rectangles (these rectangles are the tops)
- Than brush all rectangles with butter and sprinkle all rectangles with
brown sugar mixture (1 cup of brown sugar and 1 TBSP of Cinnamon)
- Next add about 2 heaping table spoons of pie filling to each rectangle
without holes
TIP: (Its easier to add filling when its cooled down)
- After filling is on pies grab a rectangle top and put it on top of the pie sheet with filling than repeat
- Fork around all the edges of the pie dough and brush with Egg wash.
- Bake for 15 mins at 400 degrees or until Golden Brown
