Actually for us (Maharashtrians) and Karnataka it's thalipeeth And sarva pindi in Telangana Andhra regions Millets are something which we Deccan people are proud of also gluten free healthier than wheat roties And best jowari bajra roti You will get in Maharashtra Uttara Karnataka Telangana Perfectionist in such rotis Also we make dhapati We do it thicker and also thinnest roties or bhakri Here in Deccan areas people prefered millets and rice as daily food and chapati poli puranpoli (all wheat) were prepared only on special occasions(also millets were considered as poors food but now it's opposite ) Aunty ji did it same as thalipeeth with vegetables 😋yum

I want to tell something about jowar roti, our elders always say that don't use hot water to kneed jowar roti,usase pet mein jalan hoti hai,jst take small small portion of normal water n kneed it with ur palm for 3,4min,it will develop gluten..
