My Mother made this fudge with brown sugar we never cooked it for an hour lol maybe 10 minutes

There's a difference in quality with certain techniques.
When using sugar for fudge you are better off using brown sugar. It works out that it wouldn't take as long but if you like it this way go for it and keep up the great work.
Could I add cocoa?
