2 ripe avocados diced
1 crisp cucumber chopped
1 pound tomatoes cherry, Roma, heirloom, or a mix
½ medium red onion finely sliced
2 tablespoons olive oil extra virgin
2 tablespoons balsamic vinegar or lemon juice
3 tablespoons parsley chopped
1 teaspoon salt
¼ teaspoon black pepper

Okay, I just made this and it is delicious! I didn't wait for leftovers, I just added the feta cheese and chickpeas and made it a meal. It kicked it up a notch. I had only a white onion on hand and used that. With the right amount of salt, this salad is bangin'! It pleased my palate. Thank you! 🥗😊🥰
I just made this for my sweetheart. I used 2 avacadoes because he luvs them, also used extra lemon juice. I served it with air fryer Omaha steak. Slam dunk!!!! It was a success 😋

But I love Cilantro - didn’t know it until years ago, I visited my sister in Texas & we would go to this little chicken place called El Pollo Loco - we don’t have any in Florida & the chicken was sooo good - anyway, one of their sides was a chopped salad with lots of Cilantro - I was immediately hooked ! I am not a salad lover but i didn't want my avocadoes to go to waste. I searched for an avocado recipe, this one showed up first. Tried it right away, i didn't have cucumber and lemon. Just used calamansi as an alternative and boy... 🤯 I LOVED IT. This recipe is a must try! ❤🥑
