I've always been interested in the science of baking. It has served me well in not wasting money and time and effort spent not to mention frustration and disappointment in a less than perfect outcome.

I'll be buying zucchini today at nearby farmers market to transform into this delightful looking "bread" (c'mon now, it's really a cake, right??)

It is cake for the content of fat and sugar. Did you know that in some countries Subway s bread its clasify as cake because it has to much fat and sugar?

Yeah same story as banana bread, which is also a cake but is called bread for some reason 😂

It’s called bread because it’s made in a bread loaf pan. It’s like if you put it in a muffin pan they would be muffins. Duh.

Love it!!! Made this morning and made into muffins instead. 375 for between 15-20 minutes. They turned out fabulous

I was kind of tired, because I have so much zucchini in my garden, I've made Greek style zucchini, zucchini soup, zucchini fritters...😮‍💨But I haven't tried a sweet recipe with them!❤️ I will try it!

I harvested a giant zucchini the other day with plans to make this, also. I'll add copious pecans, though: it's practically a requirement for living in the south. ;-)

Hi John, just for reference I have been baking for over 50 years and this is the most incredible zucchini bread I have ever made. I didn't even add the espresso because I ran out, so next time it will even be better, though I can't imagine that. I will be making this bread many many more times. I was just getting ready to make this with my child size zucchini from my garden! Great minds think alike!

Just made this recipe. But I put them in the large muffin tray. Baked for 45 min. Could have been good at 40 min. The kids loved them!! Didn’t even care there was zucchini in them. Great recipe!!

Not a big fan of zucchini but I have to say this looks Amazing - always learn something new from your videos - great job as usual ~ thanks

It's the only way I'll eat zucchini, thus it is the only reason I bother growing it in my garden. Enjoy! ;-) P.S. go ahead and make it and try a slice - if you do not like it, slice the remainder of the loaf into single servings, wrap and freeze them, then give them to a friend.

I love this combination of flavours and adding vegetable into the sweetbaking is genious ♥️ My mum grows zucchini in her garden and I could not resist to bake this bread today for my family. Hi John, I made your chocolate zucchini bread and it was delicious. I made a second loaf but I omitted the cocoa powder and chocolate chip. I replace the chocolate chip with chopped pecans and the cocoa powder with brown sugar. It turn out fantastic. Thank you for sharing your recipes.

Loved! This recipe! So easy! First time making this and my whole family love it! Thank you so much for explaining everything so easy! I made them into muffins instead for portion control but still delish!

This. Is. The. Best. I used Ghirardelli 72% choc chips and a combo of Hershey’s cocoa and Ghirardelli dark chocolate baking cocoa. We are a dark choc fam. I weighed and sifted as instructed and was careful not to over-bake. I made a double batch and used mini loaf pans so that I could share with my grown daughters. I even got my autistic student (I teach in my home), who is afraid to try new things and thinks he hates zucchini, to try it. He loved it and took my recipe and some zucchini home to make his family a loaf. This recipe is now included in my favorite recipe file, and this is significant because I am a picky baker with a sophisticated palate. Well done, John!

Just made this and it was delicious. Didn’t have vanilla or espresso powder, but did add some already made coffee and it came out just fine!

Just tried the recipe. I too love how you explain things in detail. I would have passed algebra if you'd been my teacher. I used my food processor to chop the zucchini, but made sure to weigh it. Old recipes when we didn't have scales, sift flour, or cream butter can change things. I follow you, then tweak I need to. Thanks for helping me grow in baking. At 65 I'm still learning. Old recipes we were taught, a pinch, a smidge, and buttermilk. Now it's science learning new things. Thanks for teaching us so well!! Sometimes I just like to hear you in my kitchen, it's like the old days when we all cooked together. Blessings to you.

I love zucchini eaten raw just plain or in salads. My favorite pizza has an Alfredo sauce and fresh zucchini and Roma tomatoes. Yummy. I’ve made this several times. It’s a favorite of just about everyone. It truly is more of a cake than a bread.

NY Times had this same recipe but they used brown sugar and didn't include coffee or cinnamon. I followed your version except I did stick with the brown sugar from the Times. Great cake-bread and it also smells so good when baking. I think the coffee and cinnamon are a must. Thanks!

I am getting tons of zucchini this year. I have been thinking about baking some bread. I hadn't thought of doing chocolate. That would go good with a strong cup of black coffee. My mom used to shred it and freeze it in 2 cup portions in freezer bags. She would add it to spaghetti sauce to get us to eat it LOL. We never knew :)
