OMG! I have made this recipe four times and each time I am told how delicious it is…even from my wife who is 65 and has been cooking and baking since she was 17. I am at my friend’s house and I am preparing it for him now. I checked to see what ingredients he had at his house before I went to the store to get whatever else I needed. We are using beef from the grass fed beef that he raises (and has been praised for how cared for his cows are). So I am at the point where I am adding the Bay Leaves. I noticed now that what I, with my seventy year old eyes, saw as Bay Leaves, were actually ground Basil Leaves😳. I am letting the ingredients simmer for 1 hour before adding the carrots, potatoes, and celery.😬 I will add comments when the stew is ready to eat! Wish me luck!🤞 I have been bragging about this recipe for two years now.

I just cooked this and it came out FANTASTIC! I used beef stock instead of wine and tomato sauce instead of tomato paste. Other than those substitutions, I followed the recipe. The juice was thick and very flavorful. The meat was soft and so delicious. What an easy yet delicious recipe! Definitely a keeper and just in time for winter.

I made this recently with the beef stock instead of the wine and it was fantastic! I didn't have the time to cook everything for an hour, but 30 minutes at each step worked wonderfully. It tasted just like a roast that had been slow-cooking all day! The leftovers (what little there were left) were better the next day, as well. I will be using this recipe again in the future!

Cooking with wine will change your life. I don't even drink alcohol anymore, but I wouldn't DREAM of making a Bolognese Sauce or Beef Stew without it. A LOT of people will say to use a cabernet, but I prefer a pinot noir.

Worchestershire sauce would also work well. I personally don't like bouillon cubes. but you can buy concentrated broth base.

Yes I always add garlic with any dish that has onion. It always enhances everything. Im also going to add beef base. You can't go wrong with either. Its so good.

Liz the more the garlic is cut the stronger the flavor. Add it to the onions a little after the have started to cook. If you put the garlic in a hot pan first it is likely to burn and turn everything quite bitter. Good luck.

I just made this today and it turned out very well. I did sone alterations in view of ingredients available here. I used celery root insteaf of celery stalks. Also i skipped peas. I added half a can of chopped tomatoes to the sauce along red wine and stock. I also added a bit of more spices such as dry paprika and mayorane, dry coriander, as well as mix of peppers and bay leaves. Great stew.

This is a great recipe to build on, thanks for uploading, I made a few changes, added more garlic, a handful of mushrooms and instead of wine I used Guinness, right at the end I added half a cup of single cream with mustard and horseradish sauce, for a kick. I learnt that you don’t have to follow the recipes, they are here as a basic guide. Let your creativity loose and have fun, I enjoyed experimenting and it paid off!

I agree with you; stews are very forgiving. Try some V8 juice sometime; delicious. I do however think the wine version is king, BUT it isn't the only way to get a really good stew. BTW, the V8 version, IMO, stands up to the wine version. Just use V8 for the liquid; look for a V8 recipe if you do try it so you get a good ratio.

Hi Lisa: Just want to thank you for your recipe. I made it last night. It came out fabulous! The only thing I will say is....using a teflon pan did not produce the "fond" that you spoke of. But that did not deter me--- I added the wine ,then later, I added some ketchup, which sweetened it a bit, and gave it a more "rounded out flavor". I do want to say that during the browning process, I had to add oil in small amounts (throughout the batches). As I already said, I used a teflon frying pan for this part. It was NOT sufficient to add the oil at only one point. (The meat would have burned, not browned). After browning, I transferred the contents to a large pot, that was too tall for the browning process. I also cooked the meat for 2 1/2 hours, not 2, because chuck is a "tough meat" that needs a longer cooking time. But-- between your techniques and some of my own--- it was absolutely amazing !!!! thanks for sharing. God Bless !

So I've decided anytime something catches my attention enough for me to try it that I'd leave feedback on how it went: This recipe is on point! I tried making a beef and butternut squash stew once in a crockpot and didn't like how that turned out so I decided against squash. This recipe here for beef stew was wonderful! EXCEPT the 2 hours, so I made some changes. (1) When my stew was 30min on low heat, I cooked the potatoes, in a separate pot at low heat using left over beef broth and some chicken broth I had in fridge. After 20min of potatoes cooking, I added carrots (I used crinkle), and scallions (not celery) to them. By the time the veggies were done, so was the first hour of stew cooking. The other change was (2) adding chicken bouillon after I added veggies to the stew. Then I let stew simmer with lid for 10min, threw in some canned (not frozen) peas and let that cook for 3min.

This is certainly not the easiest way to make beef stew, there are plenty of seasoning packets you can buy at the market where all you add is the beef and veggies, BUT this is my go-to stew recipe. It always comes out amazing. I make this every winter when I need something warm and hearty. I must've made this at least 10 times since I first discovered this video last year. I can pretty much make it exactly from memory, but I do refer back to this vid or the recipe link in the description occasionally, just to make sure I'm doing it right. If anyone's not sure about the addition of wine and tomato paste, trust me you don't end up really tasting it in the final product. It really just adds a subtle flavor but makes a big difference. I've tried it without both and while it was still good, the wine and tomato paste make it so much better. And don't use "cooking wine" use real wine. I use Merlot. And this makes enough to feed a family of 4 one serving each, but if you make it for yourself it's even better the next day. Just keep it in an alright container in the fridge and reheat as needed. I enjoy it with a nice crusty baguette or a bowl of egg noodles on the side that I put some of that delicious broth on 😋🍲 Also, I add the carrots first, give them a 30 minute head start, then the potatoes, and 15 minutes later add the celery and simmer for about 45 minutes. Otherwise if you add all the veggies at once and simmer an hour you end up with under cooked carrots and potatoes (even with the veg all cut the same size) and mushy, overcooked celery. TLDR version: 10/10 would try again

To other inexperienced cooks like myself, just a safety tip. If you have a pot like hers and it's made of ceramic and you have an electric stove, DON'T try this. My pot split in half and the oil went right into the burner -.- thank god I had baking soda on hand to stop the fire. Obviously that was my own fault for not knowing it doesn't go on an electric stove but just in case someone else is about to attempt this, just be more careful than I was :/

Did you put a cold pot on a hot burner? Or a hot pot on a cold burner? You can crack any ceramic/iron/glassware pan if you shock them with temperature changes like that. If it wasn't that, you may just have a defective pot. Sorry, that really sucks.

my mom uses ox tail. it taste amazing!! from my vast experience and knowledge the meat you usually use for stew are tougher meats since the way it is cooked will tenderize it

My attempt was going well up to the end. Maybe I took your phrase “it’s almost impossible to mess up” with a little too much confidence because in the final phase I slapped the lid on and took a 30 min nap. I later came back to a burnt batch. I guess I’ll keep a closer eye from here on and stir continually but it would be nice to get to the point where I can let it simmer without having to stir every 5 min.

Maybe the flame was too high. To simmer, it has to be as low as it possibly can. Almost to a point where it seems like its going to turn off. This is where I learned how to make beef stew and I've never had to watch it. Maybe mix it around once in the last 10 minutes. Try it again, this recipe was really delicious, hope it works out next time.

I make it without the tomato paste, because I find it too "loud" on the taste of the other ingredients.
Just letting you know, my wife and I have had a total role reversal since I retired and she has taken on a new position being employed. I have been looking online for cooking recipes. I found yours and I prepared this stew the other night. She has been cooking and baking for over forty years (and is good at it and loves to prepare meals), and she loved this stew that I made, so thank you very much!

OMG! I have made this recipe four times and each time I am told how delicious it is…even from my wife who is 65 and has been cooking and baking since she was 17. I am at my friend’s house and I am preparing it for him now. I checked to see what ingredients he had at his house before I went to the store to get whatever else I needed. We are using beef from the grass fed beef that he raises (and has been praised for how cared for his cows are). So I am at the point where I am adding the Bay Leaves. I noticed now that what I, with my seventy year old eyes, saw as Bay Leaves, were actually ground Basil Leaves😳. I am letting the ingredients simmer for 1 hour before adding the carrots, potatoes, and celery.😬 I will add comments when the stew is ready to eat! Wish me luck!🤞 I have been bragging about this recipe for two years now.

I just cooked this and it came out FANTASTIC! I used beef stock instead of wine and tomato sauce instead of tomato paste. Other than those substitutions, I followed the recipe. The juice was thick and very flavorful. The meat was soft and so delicious. What an easy yet delicious recipe! Definitely a keeper and just in time for winter.
What I love about this tutorial is it's short, gives the necessary information and leaves the viewer to imagine and come up with their own each unique version. You can tell she's gone to school for this and has a great understanding in terms of teaching the viewer but letting each bring their own version
I like that your cookware is "seasoned." Makes your kitchen more relatable.

I made this recently with the beef stock instead of the wine and it was fantastic! I didn't have the time to cook everything for an hour, but 30 minutes at each step worked wonderfully. It tasted just like a roast that had been slow-cooking all day! The leftovers (what little there were left) were better the next day, as well. I will be using this recipe again in the future!

Cooking with wine will change your life. I don't even drink alcohol anymore, but I wouldn't DREAM of making a Bolognese Sauce or Beef Stew without it. A LOT of people will say to use a cabernet, but I prefer a pinot noir.

I've made this reciepe a couple times now, I love it. Also, I didn't have broth so I used 1 cup of water with 1 tbsp of soy sauce as a substitute, turned out great.

Worchestershire sauce would also work well. I personally don't like bouillon cubes. but you can buy concentrated broth base.
I commented on this stew a year ago. I have used this recipe four or five times since then, watching the video each time. It is a favorite in our household. I am preparing it as I text. It is YUMMY!!!

Yes I always add garlic with any dish that has onion. It always enhances everything. Im also going to add beef base. You can't go wrong with either. Its so good.

Liz the more the garlic is cut the stronger the flavor. Add it to the onions a little after the have started to cook. If you put the garlic in a hot pan first it is likely to burn and turn everything quite bitter. Good luck.

Just back here to check cooking times, so I thought I'd share- I've always loved food and cooking but maybe 4 years ago I gave this recipe a shot. It was the first thing I made that tasted properly good, food that wouldn't bat an eye if it was served in a restaurant, and introduced me to building flavours and basic techniques like browning in batches and deglasing the pot. @@sorryitsmoops I fry some up when browning/braising the beef, and about halfway through I add more with the rest of the veggies.
I just made this today and it turned out very well. I did sone alterations in view of ingredients available here. I used celery root insteaf of celery stalks. Also i skipped peas. I added half a can of chopped tomatoes to the sauce along red wine and stock. I also added a bit of more spices such as dry paprika and mayorane, dry coriander, as well as mix of peppers and bay leaves. Great stew.

This is a great recipe to build on, thanks for uploading, I made a few changes, added more garlic, a handful of mushrooms and instead of wine I used Guinness, right at the end I added half a cup of single cream with mustard and horseradish sauce, for a kick. I learnt that you don’t have to follow the recipes, they are here as a basic guide. Let your creativity loose and have fun, I enjoyed experimenting and it paid off!

I agree with you; stews are very forgiving. Try some V8 juice sometime; delicious. I do however think the wine version is king, BUT it isn't the only way to get a really good stew. BTW, the V8 version, IMO, stands up to the wine version. Just use V8 for the liquid; look for a V8 recipe if you do try it so you get a good ratio.
I've tried at least 10 different stew recipes and ALWAYS come back to this one when I want my friends to enjoy a great bowl of stew at my camp!

Hi Lisa: Just want to thank you for your recipe. I made it last night. It came out fabulous! The only thing I will say is....using a teflon pan did not produce the "fond" that you spoke of. But that did not deter me--- I added the wine ,then later, I added some ketchup, which sweetened it a bit, and gave it a more "rounded out flavor". I do want to say that during the browning process, I had to add oil in small amounts (throughout the batches). As I already said, I used a teflon frying pan for this part. It was NOT sufficient to add the oil at only one point. (The meat would have burned, not browned). After browning, I transferred the contents to a large pot, that was too tall for the browning process. I also cooked the meat for 2 1/2 hours, not 2, because chuck is a "tough meat" that needs a longer cooking time. But-- between your techniques and some of my own--- it was absolutely amazing !!!! thanks for sharing. God Bless !

So I've decided anytime something catches my attention enough for me to try it that I'd leave feedback on how it went: This recipe is on point! I tried making a beef and butternut squash stew once in a crockpot and didn't like how that turned out so I decided against squash. This recipe here for beef stew was wonderful! EXCEPT the 2 hours, so I made some changes. (1) When my stew was 30min on low heat, I cooked the potatoes, in a separate pot at low heat using left over beef broth and some chicken broth I had in fridge. After 20min of potatoes cooking, I added carrots (I used crinkle), and scallions (not celery) to them. By the time the veggies were done, so was the first hour of stew cooking. The other change was (2) adding chicken bouillon after I added veggies to the stew. Then I let stew simmer with lid for 10min, threw in some canned (not frozen) peas and let that cook for 3min.
I’m currently making this and the smells are mouthwatering.

This is certainly not the easiest way to make beef stew, there are plenty of seasoning packets you can buy at the market where all you add is the beef and veggies, BUT this is my go-to stew recipe. It always comes out amazing. I make this every winter when I need something warm and hearty. I must've made this at least 10 times since I first discovered this video last year. I can pretty much make it exactly from memory, but I do refer back to this vid or the recipe link in the description occasionally, just to make sure I'm doing it right. If anyone's not sure about the addition of wine and tomato paste, trust me you don't end up really tasting it in the final product. It really just adds a subtle flavor but makes a big difference. I've tried it without both and while it was still good, the wine and tomato paste make it so much better. And don't use "cooking wine" use real wine. I use Merlot. And this makes enough to feed a family of 4 one serving each, but if you make it for yourself it's even better the next day. Just keep it in an alright container in the fridge and reheat as needed. I enjoy it with a nice crusty baguette or a bowl of egg noodles on the side that I put some of that delicious broth on 😋🍲 Also, I add the carrots first, give them a 30 minute head start, then the potatoes, and 15 minutes later add the celery and simmer for about 45 minutes. Otherwise if you add all the veggies at once and simmer an hour you end up with under cooked carrots and potatoes (even with the veg all cut the same size) and mushy, overcooked celery. TLDR version: 10/10 would try again
Just cooked this one up following the same recipe guidelines but adding a few small tweaks like a teaspoon of smoked paprika and a bit of minced garlic. turned out fantastic my sister and I are very happy for dinner. Not to mention the amount of extra meals it has made that can go in the freezer for later

To other inexperienced cooks like myself, just a safety tip. If you have a pot like hers and it's made of ceramic and you have an electric stove, DON'T try this. My pot split in half and the oil went right into the burner -.- thank god I had baking soda on hand to stop the fire. Obviously that was my own fault for not knowing it doesn't go on an electric stove but just in case someone else is about to attempt this, just be more careful than I was :/

Did you put a cold pot on a hot burner? Or a hot pot on a cold burner? You can crack any ceramic/iron/glassware pan if you shock them with temperature changes like that. If it wasn't that, you may just have a defective pot. Sorry, that really sucks.

I made this Stew word for word pausing video till I caught up, I questioned all that wine I poured in there but man, the best stew I have had in many moons, I did have to add more water to mine and to do it again I wouldn't add salt, salt to taste later.
