1930s Braised Cube Steak Dinner
Ingredients for 4 servings
4 cube steaks (approximately 1 1/2 pounds in total)
Salt and pepper
All-purpose flour
2 tablespoons neutral vegetable oil
1 3/4 cups water
1/4 cup Worcestershire Sauce
8 baby red potatoes
2-3 medium onions, sliced into half moons
3-4 large carrots, roughly sliced
Preheat the oven to 350°F. Sprinkle the steaks with salt and pepper. Then coat the steaks with flour. Heat the vegetable oil over medium heat in a large skillet or braising pan. When the oil is hot, add the steaks and quickly brown them on both sides. Then add the water, the Worcestershire Sauce, and, if you wish, a generous tablespoon of flour that will thicken the gravy. While the liquid bubbles, use a flat spatula to scrape up the bits of meat and flour that have stuck to the bottom of the skillet. Off heat, add the potatoes, onions, and carrots. Cover the skillet and transfer it to the preheated oven. Braise until the steaks and vegetables are perfectly tender -- usually 1 hour. Enjoy!

I'm always glad to see your latest posting...but this week in particular. Personally, I am downsizing my home and moving to a condo. (You can imagine the disarray of moving boxes, etc.) and then, of course, the situation in Israel and Gaza. Such tragedy filling all forms of media! What brand is you skillet that goes stovetop to oven?
You cannot know what a joy it is to land on your “site”? Your warmth and friendliness in today’s frightening, violent times is so reassuring. I feel I should write so much more but I will just sit happily and watch the pumpkin bundt cake and the rest of your delicious meal get prepared in such a safe and beautiful place.

Hi, Kevin! Love the video! CLEANING ANTIQUE SILVER... This is a brilliant way to clean your silver. I'm always experimenting, and this is how you can clean your silver, and leave just amount of patina that you want. It's very simple and inexpensive. Buy some artists kneaded erasers, maybe two, or three. Knead them to soften, the more, the better. Just rub the silver with the erasers. Concentrate on any black spots. Then, rub the rest of the tarnished areas. I like to leave patina in the grooves, to preserve the look of age. This is great for your silverware, or other items. The more that you use the erasers, the better they get. Happy Polishing, Kevin!

Hi Kevin. I've been laid up with an injured foot and casted to the knee for 6 weeks, which will be followed by 6 weeks of physical therapy if I'm lucky (surgery if I'm not). I'd just begun planning all of the fun holiday cooking and decorating, and it looks like that's not going to happen this year. So your video was a bit a vicarious balm to my soul. Hi Kevin, I love ❤ that china pattern. I must've been channeling you this morning because I made two pumpkin loafs. They have a cream cheese filling and topping which is marvelous! I'm sure it would work in your pumpkin bundt cake. It's just 4oz cream cheese, 1/2 cup granulated sugar, 1 egg, 1/2 cup flour and a splash of vanilla extract. Beat till smooth. Fill the Bundt cake mold 1/2 full, spoon the cream cheese filling in a ring and top with the remaining pumpkin batter. It makes a pretty and tasty surprise when you slice the cake. How's that cute kitty? 🐈

I finally understand why my wonderful Stepfather ate cubed steak evry week. He just passed away age 87. It must have been a loved dish during his youth and early adulthood. Thankyou for sharing, Kevin. That dish is a delicious memory nugget now which I hope to try soon.

Dear Kevin, What a warming and delicious fall dinner party menu! The table setting reflects the beauty of Autumn. I love how you make such healthy, simple and affordable meals that look like a million dollars ($US). 😊 OH how I miss those days when I had a big garden, but grateful for the pint sized one on my balcony. The soulful 'Autumn Leaves' is a perfect music choice for these colder, darker months (my favourite time of year - I love both Sinatra and Cole's versions of that classic number). I must say I am very bored of the ghastly modern song Kevin uses far too often @ 11:00. No idea who the artist is, but it's dreadful, like the plaintive, cliched cries of a pitiful, love-sick teen! I've now heard that cheesy song so many times on Kevin's videos, sad to say it's putting me off the channel! I sincerely hope KLJ will take my comments on board, and research some fresh music choices. He plays beautiful piano, as we saw in his last video - couldn't he provide his own backing track (copyright permitting, obviously)? I'm sure many good people would find Kevin's instrumental piano a wonderful addition to his classy uploads - and so much better than the modern 11:00 track, which frankly is like nails down a chalk board! 😱😱😱

Baking hack…1cup of white sugar plus molasses 1 tbsp +/= light brown sugar 2 tbsp +/=brown sugar 3 tbsp +/=dark brown sugar Also, I use heavy cream in a plastic bottle with a cone tip to write my last name initial on top of the soup. It all looks delicious and I live the simplicity of the table setting.
Kevin mentioned his Y-shaped potato peeler. These are excellent for larger potatoes but I find that my small peeler made by Victorinox, the company that produces the Swiss Army knife, is best for small ones. It is also ideal for peeling apples and pears. It has parallel cutting flanges on either side of the centre point which means it is suitable for for use in the right or left hand. I'm sure these could be obtained in the USA probably via Amazon. I love to see leek & potato soup - along with carrot and coriander(cilantro), I think it's one of the favourite ones here in the UK. I have just bought a nice small pumpkin to make pumpkin soup. Happy cooking and, in the awareness of the violence and absence of the rule of law in many places in the world, let us be thankful that we have good food and fuel with which to cook it.😮

Another lovely video. You may be interested to know that I live in Stoke on Trent, the home of Minton China. I have two beautiful gilded plates by Minton and some China from a company called Grays China, where my mother in law worked and she actually hand painted the China with beautiful flowers and pink dots, all freehand. Yet every piece is an exact copy. Nowadays, much China is lithographers instead of hand painted. Also, I have two sets of China from Wedgwood, which is just a few miles from where I live and where I was born.
Well, i could eat that as left overs all week long😊❤
Lovely dinner. I would have added some fresh chopped parsley to the 'stew' just to finish it off and add more visual interest. And would also add a little dollop of whipped cream or even cool whip to the cake servings.

I love recipes that can be made ahead...makes for a more relaxed party. That pumpkin cake looks wonderful! I love anything pumpkin. My mother used to make cube steak but she called it swiss steak.
