Ingredients
To Make Chicken Broth
Chicken - 250 Gms
Onion - 1 No. Chopped
Garlic
Carrot
Celery Sticks
Water - 2 Liters
Peppercorns
Rock Salt
Bay Leaf
To Make Chicken Clear Soup
Boneless Chicken - 100 Gms
Chicken Broth
Broccoli
Mushroom
Garlic
Bok Choy
Chopped Garlic - 1 Tsp
Pepper
Salt
Soy Sauce - 1 Tsp
Method:
1. For the chicken broth, chop the onions roughly, peel off the skin and roughly crush the garlic cloves and put them in a bowl.
2. To the same bowl, add in the peeled off the skin and roughly chopped the carrots.
3. Add in the celery sticks too.
4. Now add water to a pot and drop in the chopped veggies.
5. To the same pot, add the cleaned and washed chicken pieces, peppercorns, rock salt, bay leaves and boil them.
6. Once this whole mixture comes to a boil, mix it all well and cover the pot with a lid to cook the chicken and veggies for 1 hour.
7. After one hour, the mixture turns aromatic and fully loaded with all the good flavours of veggies and chicken. Strain it all and keep the chicken broth in bottles for storing by refrigerating or freezing it.
8. Now to make the Chicken clear soup, chop the broccoli, mushrooms, bok choy and garlic.
9. Now take the chicken broth in a pot and add in the cleaned boneless chicken pieces.
10. Add in chopped garlic, pepper powder and mix well. Now add the chopped veggies and soya sauce.
11. Mix it all well and boil the soup for 5 - 10 mins.
12. Healthy and tasty Oriental style clear chicken soup is ready to be served hot and nice.

It stays good for 4 days in the fridge, but if you freeze it, it can last upto 2 months easily😊
