    TIP: Keep the burger on the paper, place the metal rack on top of the burger, flip the whole thing over holding the rack and the paper as one piece ... once flipped peel the paper (now on the top) off ;o}

    When using a rolling pin...underneath your parchment paper, place the meat between paint sticks or rulers on each side and roll the rolling pin on the paint sticks to make the thickness consistant, which will also make the cook time consistant as well...(can stack a couple together to get to the preferred/desired thickness....do a full clump then cut into strips or roll out individual strips) To bump up the flavor a tad, try using a little liquid smoke

    I just experimented with gr beef jerky today. Rolled it out between parchment paper, cut with a knife and used a spatula to transfer to my pan. Cooked in the oven @170 for 3 hours. Plan to get a dehydrator one day!

    Thanks for sharing this. I am about to make some this morning & my oven only goes down to 170° or bread proof at 100°. So I was wondering which one I should use. I'll try the 170° first. Thanks so much!! And thanks Cassie for teaching/sharing this method. You have so many Fantastic recipes.

    You could also roll it out in one big chunk on the sheet, then cut it in strips once it was dried. Fits more on a sheet that way. 🙂

    My husband makes homemade jerky with ground elk, ground bison, or combo of the two. He loves the jerky gun! Easy and quick for him to lay strips on the silicone mats over dehydrator trays. He leaves in the dehydrator all day (probably about 10 hrs or so), and turns it half way through. Better than anything you could find in a store. Experiment! :)

    I bought a jerky gun and right out of the box it wouldn't work. Piece of junk. So I had to improvise too. I used my tortilla press. Works really well to go get thin rounds. Used parchment so I was able to quickly flip the rounds onto to trays using the parchment. The parchment peeled off easy. Reuse the same 2 parchment rounds for the whole batch. This makes great dog treats if you don't add any spices. 😊

    If you want to try something really easy, get some carne picada beef, it's already sliced up real thin. I just take it out of the package and spread it out on dehydrator sheets in smallish chunks. Sprinkle with salt. Dehydrate. In my opinion it it is better than regular jetky. Its softer and has the right amount of fat to make it very tasty.

    You might chilling the ground after everything is mixed in. Then it will give a better consistency when trying to pipe it out of the cookie gun without being to squishy.

    Simple I use a gallon freezer bag Place 2 chopsticks inside the bag, 1 down each side Fill up between them and roll it out Flip the lot over by holding the two sticks and the bottom pivoting on the counter Cookie cutter down the length in 4 or 5 strips and its done Thickness is consistent for equal drying time in the dehydrator You can vary the thickness by changing out different dowels Easy and no squishy Oh yes, the 2 sticks down the sides help you with your straight outside edged You can use any sized bag for the larger or smaller batches you are making..... So simple

    Press the meat between parchment paper (top and bottom), between two cutting boards or baking sheets! I like making "smash burgers" this way, super thin and I get a better crisp but usually use two dinner plates

    Love this video! I experimented w jerkey a few years ago. Did it in the oven. Found the easiest way was ground beef, roll out as thin as possible to almost the size of your rack, dehydrate in one large piece, then cut w scissors after it's done. Now I need to go make some jerky! ❤❤

    My Cabela's dehydrator is really nice, but yes, it has plastic components. I would love to have this one but I can't justify it.....yet.

    Ground beef works well with the dehydrator so does thin sliced Carne asada. Instead of worsteshire, try redmonds smoked salts. OMGoodness, so good!!!! I am right there with ya, no plastics in my cooking. My dehydrator is all glass and stainless steel as well. Thing gets used weekly.😅😅😅

    ​@CarnivoreQuest you should try ground turkey or chicken, as those meats are cheap. Buy boneless, skinless chicken breasts or thighs & grind in food processor/blender, season, rollout, & dehydrate. Yum!!

    Awsome video! Since you asked 😉. I make jerky all the time, this is how I streamlined the process... salt definitely, seasonings your call. After mixing I put about 1 pound, (because that's how much fits on one of my racks after it's flattened) of the ground meat on a flexible, plastic cutting board. I just flatten it with my hands (hard to get the exact size you want with a rolling pin) into a rectangle a little smaller than the drying rack, so there's not really any trimming later. Then lay the drying rack on top and flip it over carefully and peel off the plastic cutting board. About halfway through the drying process I flip them over. Just before they're finished when still warm and pliable I cut them into whatever size strips I want with kitchen scissor or a knife. You can still put the pieces back in a little longer if needed. I personally find it's a little quicker/easier than a reloadable shooter device. But that's just me, thanks and keep up the great videos!

    Thanks for the video! I made my first pork belly jerky a month ago with a dehydrator I had stored away for years. It was very good - but it was plastic and decided to get a metal one. So I have one now that is so similar to yours. Planning to use it this week. I already buy Carnivore Crisps and Carnivore Snax and love them both. However, this will be a great way to make it my own way and much less expensive.

    I love my Excalibur dehydrator 9 shelves, fruit leather mats available U can culture yogurt in it too, in mason jars! 24 hrs and there is little to none lactose/carbs. I made jerky once in a county Extension class. It was amazing!

    I put 1/4 cup very cold water in 1 lb meat. Also work in small batches and put meat in freezer. The colder it is the better it works in your jerky gun

    Made some deer jerky after borrowing my brother's jerky gun, then bought my own from Amazon... amazing!!! I don't have a dehydrator, but arranged on racks in my oven at the lowest temp. It took just under 3 hours to complete and was delicious. Will be making a lot more because ground beef is even cheaper than the cheapest roasts usually. Thanks for the video. I also am learning as I go along, what a yummy way to experiment :)

    I just use plain 93% lean ground beef. I use a manual pattie maker lined with 2 pieces of parchment paper. I measure the beef out with a melon ball size scoop (the kind you squeeze the handle to release the contents of the scoop. Basically making small thin smash burgers. I can get 16 to a tray. After cracking a little salt over them, I dehydrate them at 165°F until there is no pink left. Mine take about 6 hours. Store in zipper bag in the fridge. They are good plain or with a schmear of butter or cream cheese.

    I just recently started dehydrating! So fare I've used London broil, chuck, and petite sirloin. Only with salt. Need a meat slicer though. It's hard to get even cuts with just my regular knives, especially on the chuck. I look for meat sales to keep the prices down. Once I get a meat slicer, I'm going to try try brisket!

    Some butchers at your local grocery stores will thin slice meat for you if you ask. They might charge a few cents per pound, but it might be worth it until you get a slicer

    @@leahrowe847 Nothing is free in Canada🇨🇦 Sure, the meat will be more than double the price per pound if the butcher slices/cuts it. My Chinese butcher will only slice a pork roast with bone in with 4 cuts for free. So, I request three equally spaced vertical cuts and one horizontal through those same pieces thus becoming 8 pieces of pork steak! Not bad for under $1.75/lb. Oh, I did eventually buy a slicer…a note on meat slicers…buy a powerful 200 Watt model. The higher power results in better easier more efficient slicing! 🥩🥩And look for a sale!

    Maybe because I'm a pastry chef, I would have formed a log before rolling to get better uniformity in width. I'm a bit OCD/anal in wanting it more even. I have a shooter that I haven't used yet. Soon as I get some beef to grind, I'll give it a try. I'll have to keep mine frozen because I won't be adding salt. Also no seasoning.

    I just bought a dehydrator 😳 and yours is my second video about ground beef jerky!👍. The first one filled the white tray, covered with wax paper, inverted it onto the rack and cut the strips afterwards, fast and less messy! I need to get to bed-didn’t watch either fully-but I recently bought a 3 pack of SMOKED Redmond Salt …I think it’s a gift pack??? It has Hickory, Cherry and Chef’s Blend…. I’m excited to try them making jerky!! And ground beef jerky will probably be my first!! I’ll check out your recipe soon! I’m just 8 days into my carnivore journey! You have fun videos!! God bless!

    I make Jerky too. It's my favorite on the go or to tired to cook meal. Lol. I have a nice dehydrator too. For those who don't, you can do it in your oven. If your oven won't allow you to lower the temp enough, just crack open the oven door a bit.

    Crowding the trays is not really an issue. As long as the meat strips are not touching, the air will circulate and after twelve hours, it will be fine.

    I do biltong, I use roast beef salt pepper and vinegar let it marinade overnight then put it in the dehydrator for 48 hours comes out great 👍 easy prep and a great snack turns 10kg roast beef into $100 per kilo carnivore biltong I don’t put coriander in it because it’s not compatible with carnivore you don’t have to put pepper in you can do just salt and apple cider vinegar which you don’t taste.

    Next time dont cut them in strips just make the whole sheet then cut after, trust me i do this method with my smoker and smoke it at 150 celsius for 7 hours and its amazing

    Pasta roller! Just the part that rolls it flat. Before carnivore I used that for rolling out cut-out cookies and gingerbread for nice light crispy cookies.

    I've been tempted for a while to try making my own jerky. My only fear is that I'd love it and have to worry about eating too much jerky. LOL It's real tempting to get one to try making jerky with smoked salt and smoked paprika. Or a lot of freshly ground black pepper.

    I've played around with different times. The second batch I didn't let it go for as long, I think about 9ish hours and the texture was perfect for me! Much easier to eat. But it's all preference👍

    I LOVE hamburger jerky! I also buy eye of round and slice it thin for some dang good jerky! i havent tried the Worch sauce but I will! I normally just use Redmond smoked salt. The apple pecan is da bomb. Thanks for this! Great reminder that i need to make jerky. (I bought my Nesco dehydrator in 2020 for $34 of Amazon. I'm so glad I sprung for it then. Crazy high now)

    Wow! Never thought to making my own. I was never going to give away my mother's rolling pin anyway, but now it be used again. Agree with you on not cooking in plastic. Our market has extra lean ground beef, which is awful, like cardboard to eat as hamburger, but should be ok for jerky. Just sorry i got rid of my Wooster sauce!

    Thanks for sharing Cassie! Larry has mentioned that he has false teeth, how does he find it to chew on? Are his falsies screwed into his jaw or removable?     In a poor man's steak recipe I used to do it called for mixing the ground beef and then refrigerating it overnight before cooking it. I am wondering what would happen if you did that with the jerky before laying it out in the dehydrator.....just a thought. @@CarnivoreQuest

    It all depends, about two months in the fridge and if you get some of the silica gel packs they will last longer.

    Okay, today is the day! I've gotten my Cabela's food dehydrator out and am cleaning it now. I'm anxious to give this a shot. For me, but also for my little dog Ruthie. She's never been a great eater and as small as she is, it's easy to share my carnivore with her. But, I learned the hard way that you can't give her fatty meats and she doesn't do good on standard raw foods. She loves hamburger cooked and crumbled and her stomach handles it. I bet she's going to love this and I know I will. I think I'm going to add some Hatch Green Chili Seasoning to my portion along with some other spices, but will make hers plain.     Well. I'm obsessed. I ordered pet grade rawhide sticks and they come today..My plan is to wrap unseasoned 90/10 hamburger around them and dehydrate my jerky that way for my Ruthie. I buy dog treats made that way and she likes them. She's a finicky eater and likes my pet jerky. So easy to feed her now and healthily. I'll let you know how they turn out. Ruthie's a smaller sized dog. it would probably get really expensive with larger dogs. @@CarnivoreQuest
