Easter Egg Cheesecake | Low Calorie!

Seems like an odd combination doesn't it? You won't question anything after you've tried it. This will quickly become an Easter tradition and a firm favourite for the entire family.
Serves 2
Prep time: 10 mins Cook time: 0 mins
Ingredients
• 50g light digestive biscuits
• 100g light soft cheese
• 100g 0% fat Greek yoghurt
• 1⁄2 tbsp maple syrup
• 1 tsp vanilla extract
• 25g mini chocolate Easter eggs, crushed
• 25g mini chocolate Easter eggs, whole
Method:
1. Put the biscuits into a zip lock bag and bash with a rolling pin until crushed.
2. Add biscuits to the bottom of two small bowls of glasses.
3. Mix soft cheese, Greek yoghurt, maple syrup and vanilla extract well.
4. Add crushed mini chocolate Easter eggs and fold gently.
5. Spoon over the biscuit base.
6. Top with whole mini chocolate Easter eggs and place into the fridge for 10 minutes and then
serve.
