Ingredients
1. Red oolong tea kantenRed oolong tea - 200g (loose tea leaves 8g; water 250g)Red oolong tea vinegar - 100gPowdered kanten - 3gFine sugar - 200gTrehalose sugar - 100gRed food coloring - a small amount
2. Orange kantenCandied orange peel - 25gLemon juice - 30gPowdered kanten - 3gFine sugar - 200gTrehalose sugar - 100gMizuame - 50gWater - 270gYellow food coloring - a small amount
・Red oolong tea vinegar can be substituted with other mild-flavored vinegars
・Red oolong tea can be substituted with black tea
・If using other types of vinegar and tea, adjust proportions to taste
Directions
1. Boil tea leaves in water, brewing it into a highly concentrated tea liquor. Set aside.
2. Mince candied orange peel and mix it with lemon juice. Set aside.
3. To make the orange kanten mixture (2), bring powdered kanten and water to a boil, then add trehalose sugar and fine sugar. Once sugars have completely dissolved, remove from heat.
4. Add mizuame and stir to mix evenly. Mix in minced orange peel and lemon juice from step 2, and add yellow food coloring.
5. Tilt the yokan mold at an angle with a folded paper towel, then pour in the orange kanten liquid.
6. To make the red oolong tea kanten mixture (1), bring powdered kanten and water to a boil, then add trehalose sugar and fine sugar. Once sugars have completely dissolved, remove from heat.
7. Stir in red oolong tea vinegar until evenly mixed, and add red food coloring.
8. When the orange kanten mixture has partially set, gently pour in the red oolong tea kanten mixture.
9. Once the yokan has cooled and set, cut into slices for serving.
・If the orange yokan layer is not ready for the next red oolong tea layer to be poured on, temporarily place the red oolong tea kanten mixture in hot water to keep it warm
・Be very gentle when pouring on the red oolong tea layer, or it might break through the delicate, partially-set orange layer and result in failure.

    真的是艺术品。日本总能将一些原本你未曾注意的东西做到极致,最终演化成一项职业或是艺术,这样的专心致志很值得人学习。中国其实也有这样的民间艺术,希望能有人一直传承下去。
