What is the difference between just editing the speed curves versus applying easy ease in/out on the keyframes Plus editing the speed curves? I thought by editing the speed curve, depending on how, is basically just the same as applying easing to the keyframes. Thanks

By adjusting the speed curve, you are controlling the AMOUNT of easing in and out.
would you know why after I click on graph and the side control is only one slope opposed to a double side hill.

Why does my graph editor look different? Yours is like a u shape but mine looks like an s

There are several ways to view the graph editor. At the bottom are a series of icons. Select the one to the RIGHT of the eyeball icon. Select "Edit Speed Graph". I would imagine you have "Edit Value Graph". Let me know if that works for you.
