    I’m also a Texan and I’m a single woman. I have an entire room full of food, meds, batteries, Ammo, water, propane, etc... I also grow my own food and save seeds. You can never be too prepared!

    I was reluctant to dry can as I have no experience. Freezing goods for days, sterilizing jars 5x over, etc etc seemed overwhelming. Thanks for the "real person using regular things around the house" method, I just did my 1st batch of rice and lentils today. 👍 Edit: I hear my lids popping... YAY!!!😆🇺🇸

    Just want to share what I know, for what it’s worth. Botulism lives on moisture and doesn’t need air. Therefore, you don’t want to put your lids on the jars until AFTER they come out of the oven, ensuring that any moisture escaped while in the oven. They seal just fine.

    That's how I do it too. Rice, pasta and sugar. It's not much to date but did pre-pandemic but have 6 1/2 gallon jars of each. She WON'T go into the basement so almost 4 yrs later it's still there.

    Following you Here over the pond in England the UK. although we dont have the freedom to buy a Homestead. a small holding over here unless you are wealthy. but since COVID. food stocks went very low. getting the basic foods. from rice. pasta. even toilet rolls. as the profiteering food chains removed all the decent products snd put out all the garbage products. so i have started to prep. just done rice today 24/08/20. burnt my first batch as i did 230 Degrees but i didn’t relies your temperature was Fahrenheit. and ours is Celsius. but hay learning curve second batch came out brilliant. scared the wife to Death. she came out saying your jars are cracking. forgot to tell her about the popping. keep posting. chris w ( England UK 2020)

    I appreciate this video for the time alone you took to make it! I dry can some things, but for my large quantity things such as beans, rice and flour, I vacuum seal and add diatomaceous earth to the bags, and then put in airtight food safe buckets and sprinkle some diatomaceous earth in the bucket. With over 1200 lbs of rice put up, I couldn't do jars;-) I'm proud to see a man with the knowledge to this, my Texas neighbor😁

    Hi . Glad rage mentioned your channel. I’m going to dry can some stuff because of your video. I have been pressure canning for a while. Been putting rice in 5 gallon buckets but this seems much better for long term. I figured buckets probably good for 1-1.5 years. Dry canning will keep for much longer. Thank you and keep on keeping on. HAVE YOU EVER USED 1/2 GALLON MASON JARS IN THE OVEN…..

    None ya Texasontheback20 hello thanks for the video. I just canned some pasta in a mason jar and I noticed that 2 of the jars has moisture. They are sealed it but should I be worry about the pasta? I put the jars in the oven before yo dry and sterilized before I put the pasta in.

    Wish I had storage space, but this old house ( nearly 103 yrs old) is lacking, but I use what I'm able to. Love dehydrating and canning and have jars tucked away where ever there's space. Thank you for sharing with us.

    There are mattress frames that are high.......under the bed is a GREAT place for storage. Queen Frame was under $100 and you can put big tubs below.

    If you have a newer box spring under your mattresses it may just be a hollow box. If so, you can flip it upside-down and fill with food prep. You will have to put a wood cover on box spring before replacing mattress.

    Just a bit of helpful advice. over the pond here in england the uk. just dry canned flour in the oven 120 degrees wiped the top with dry towel also added Oxy absorber. i still have moisture in the flour.

    Christian Watson I have never added oxy absorber be careful. Unknown chemicals heated.... 235 degrees F. 90 minutes If it’s moisture leave lids off. Run in oven for hour then install lids continue with process ... it must be very fresh flour I tend to see a little browning on bottom usually..

    thanks for stopping by, there is a part 2 variety....Remember you can CAN anything Dry!!!.....taters, dry milk, chips, snacks, cereal, oatmeal, flour, sugar..... Just did some liquid Milk in pressure canner. Stay safe, stack it to the rafters

    Yes on lids...not too hot, just put them in as long as needed to warm a bit, toward end of heating time for your jars

    Well, here in the U.S. it's too late to buy mason jars as they are near impossible to find available in stores or online. Wish I had bought quart size jars at least one year ago and started prepping them. But I want to thank you for the other info towards the end where you talked about what will be more valuable when the fat hits the fan. For most of us now, it's do what you can with what you have. I'm storing my rice in a variety of #1 PET glass or plastic jars and bottles with screw on caps only and added some bay leaves to help keep the bugs away. No, it's not the ideal way to store dry ingredients, but I'm doing what I can with what I've got available. Thanks for your common sense. Edit: I was still able to get some 300cc oxygen absorbers 😊

    Try. Attwoods or Tractor supply online... ace hardware..... look around smaller towns they are still available. I just got 10 cases and still get couple cases a week.. good luck thanks for watching. Got some other canning vids on channel. Stay safe

    @@NoneyaTexasontheback20 - Well, Jake, I'm a 73 year old single woman living on a small fixed income (Soc. Security) and I've spent all I can already on prepping for my small one bedroom apartment. I don not own a car (use public transportation) and have actually been prepping since Feb '20 - but I was only buying canned goods then, not realizing I need to do more long-term prepping of dry goods in mason jars. When I started reading about shortages of jars and lids this last summer, I was able to buy 6 dozen pint size wide-mouth jars. I bought the pint size because of it only being me and I didn't want to open a whole quart at a time of something, and as I recall the quart size wasn't even as available back then. Thanks for responding to me comment because hopefully others reading it will be able to check out the sources you referred to. As an aside, when I saw you pouring from the bag, I thought, "Only man would pour from a 25-lb bag of rice into jars. I do not have that kind of strength (or dexterity) to do that without spilling at least half the bag onto the counter or the flour. I'd need to use a scoop or measuring cup to reach into the bag to get the corn into the mason jars. 😊

    @@donnamoreau150 - Yes, Walmart has been a good source for me since I first commented 1 year ago; I've bought mostly wide-mouth quart and pint size, along with a few doz 1-cups. I did buy 2 flats of 1/2 gal size, but found them to be too heavy to deal with once filled.

My only concern with prepping is when you don't have a stable home and are constantly on the move at any moment, how does one prep long term , that's why I've gone to foraging , cause in the end what if we have to leave our homes and preps

    @@soonersfan007 that is always a question and room for opinion… I do NOT remove mine, then I have to try to keep up with them and store them… I stack cases on cases as well…. Both not recommended but I have lost very few jars…

    I only oven can flour, bread flour, corn meal, grits, & oatmeal. 215 degrees for 90 minutes with product in the jars without lids on yet. Take out of the oven one at a time and put the lids on and tighten the bands on. The lids will pop and seal. Can warm the lids in a pie plate for 15 minutes along with the filled jars.

    Hello friend! So appreciate the play by play. It may have seemed silly or elementary to veteran canners, but not to me. I needed it all. There are two things I am perplexed about hopeful someone will answer. Why wouldn't you blot or dry the lid you have removed from the water bath? Even if you were canning flour or dehydrated milk powder...I thought all moisture was our enemy. Is that small amount beneficial for the vacuum to seal? Once that stored rice/beans/flour is opened how long of shelf life do you have? If you were only canning for a two person supply what type of dry items would you choose NOT to can in that large family sized half gallon? Does that low temp oven damage anything that should be avoided? OOOH, One more...if the amount of dry good only fills half the jar, do you go ahead and can it in a big size until you get a smaller size maybe? Thanks for one or all who will answer any of these Q's I have.

    B. The excess moisture will evaporate..once opened expect normal shelf life 1 year... can everything. Coffee cream to crackers 1/2 full are ok to can but try to get them full. Thanks for watching I I have several vids. Anything you can store will benefit later

    I’m a long time canner. I’ve read other ways of dry canning. I think the worst thing we can do is nothing. Use a little big of a large bag, seal it by putting a piece of tape on it. Then when you need it again, start picking some little critters out of your bag. Nothing here is going to hurt you. If the moisture happens to wreck a jar, dump it and go on. Keep going, teaching, showing.....we appreciate. We can all chose our method, there are possible negatives with everything you do, even if it comes from the University of Utah!

    Aloha hugs 🤗 During a Earthquake the Jars will break I have been using Freezer Ziploc Bags My Bay leaves inside Galvanized Steel cans Sprinkle Cinnamon over that. 1978 Winter wheat still super I have to repack it again it has traveled Hawaii Washington & Florida AC 68 degrees Om getting into a Few Hundred Now checking them The ones canned in Metal maybe 2 35lb Cans They where sealed using Dry Ice The Plastic breaks down

    Do not put your lids in hot water on the stove. Put your lids in a dry cake pan with the outside surface facing up for the last 15 minutes and they will be sanitized. You don’t want to add moisture to the dry flour. Take one hot jar out…wipe rim with a clean dry cloth…use a canning magnet to grab a lid…and put it on the jar…screw tight…place hot jar on a wooden cutting board covered with a towel. A canning magnet is found in canning supplies. It looks like a plastic stick with a magnet on the end. You could use any magnet just be sure you are just touching the outside surface of the canning lid so it stays sterile.

    Same thing happened to me with pasta in vacuum seal bags the noodles sharp edges caused the bags to deflate because of all the tiny holes

    I was wondering if I tell you the process I use, if you could give your thoughts on it as mine is totally different. Would appreciate any input at all.... I wash my jars and put on a cookie sheet for 15 mins at 250 take out the jars and fill leaving some headroom at the top put filled jars back in on 250 for 1/2 an hour (no lids) with 15 mins left on the timer I put my lids in the oven then when the 30 mins is up I take them all out and put on lids and screw on the rings. I know there are two different canning lids and am I right that tattler lids are for reusing?? Not to sure on that one?

    I would be concerned of heating product all way through at 30 min... that’s reason for long soak .... that should work for lids

    yes Jane I used to freeze it then mylar bag it...Now everything is in Jars the 235 degrees kills any larva or bug and its sealed bug and rodent proof....thanks for watching....I have a bunch of canning videos pressure and dry canned dehydrating too more to come

    So I listen to another prepper she's a professor and really researches yesterday researchers heard process of canning is canning and freeze drying and dehydration... And adhering to the guidelines from Food and Drug Administration.. And what she said about do I canning makes sense to me... Though I did do it after listening to you... The process of heating it through According to the FBA is not hot enough or long enough to sterilize the food yeah I sterilize the food although it will probably probably kill any larva or eggs that exist... And freezing it does not work because when you throw it outhought out this condensation if you're going to dry preserve your food it has to be totally dry jar and the food... The problem with dry canning is that yes you do get a seal you get a seal and you do kill some of the lava and eggs... But the biggest enemy to food is oxygen. And why can't in this way Does not get rid of the oxygen in the Jar.. The only way to do it is completely dry jars and drive and why food no moisture... And use the vacuum seal method to suck the air out of the jar... Any larva or eggs that hatch will not survive without oxygen

    Hi, really nice video. I just dry canned rolled quick oats in both 1/2 gallon and quart jars. They had moisture in the jars for a little while, this morning they look good and are sealed good. Have you ever had moisture in your jars? Is this going to mold or cause bacteria to grow? I'm another one that has pressure canned for years, first time dry canning though. Thanks!

    Catch 22 Renderings no it should not, I’ve never had anything mold some things are just really fresh when you can it so can have a little more moisture from what I’ve seen... fresh beans seem to do same thing... I always use quarts not always most efficient but seems to work great, may consider little more time for larger jars... good luck and thanks for watching

    Oxygen absorbers should always be used inside of Mylar bags for long term storage. Bugs cannot live without oxygen and will die. Thanks for your video!

    Thanks for stopping by Bethany, I don't use mylar anymore, I much prefer the jars. I had mice and bugs which got in from the outside of bag. Bugs can and will chew holes in the bags. Thanks for watching

    Bay leaves will keep the bugs away. Last month, i put up nine 5-gallon buckets with 5-gallon mylar bags with oxygen absorbers and bay leaves. Last week I did the same with bread flour, eight of them. Keeping stocking up while you still can.

    I was told never use wet lids when dry canning. Put them in a pan in the oven for a while till your ready to use them. Turn oven on 200 degrees. After putting lids and rings on, tighten finger tight till after on in oven for an hr and a half. Then tighten up rings tight till they seal.

    connie clark there are less than a few drops of moisture on lids... every product contains moisture... some more than others...@ 235 degrees moisture is steamed off.... even with some moisture left in jar it is fine...I have opened 10 yr old dry goods still as fresh as the day jarred....moisture is not the enemy... air is.....thanks for watching

    Thank you for this and every video you make. I am new to canning. This may be a stupid question but here goes: Why don't you leave the lid off as you dry heat the rice in the oven and then put the lids and rings in the oven on another sheet and then take them out, put an oxygen absorber and then put a lid on jars with rice? That would get rid of the rest of the dampness, water, etc, in the jar.

    Montana GrizzFan thanks for watching I can’t really answer only assume. These techniques were passed down to me and I just continue same way, which precedes oxygen absorbers 😁.. the lid on the jar seals and pulls vacuum. There is no need for the absorber, I don’t think it’s heat rated either...I rarely see excess moisture and even few I have I don’t see issues.... I just do it how I was taught and it goes back a long time 80-100 yrs.. thanks again for watching “can away “

    @@montanagrizlyfan I have seen videos where the lid is left off, however I don't do that way, your handling hot product and lids, with risk of dirty seal or contaminant. I clean everything on counter cold to ensure good seal, and easy to deal with not hot. Thanks again for watching hope your canning goes well, I have part 2 up, I can a variety of other things.     Hi Fran! I wash my jars in the dishwasher and the rings too, then I place my jars in the oven at 250° for 20 minutes for quarts 25 for half gallons, turn off oven, then crack your oven open to let them cool to the touch. I always prep my jars ahead of time for dry canning. This oven processing will eliminate all moisture. I hand dry my rings and store in ziplock bags. Store lids in ziplock bags separately unwashed, they will be sterilized when you process in your oven during canning.. I place my sterilized jars back in their orginal box, then I put a clean towel over them. Then when you are ready to dry can your jars are ready. New jars always have an oder, and used jars too when sealed, so this away you know they will be fresh an clean without odors inside. 🥫❤💕

    A friend canned pancake mix in quart jars. 200 degrees for 2 hours..jars sealed but jars were not hot. What does she need to do

    CINDY FOSTER needs to be 235 for 90 minutes. I would just put them back in oven and do them again.. Might check oven temp out t stay in there. 200 is hot but not hot enough. Thanks for watching

    Do you remove the bands when they cool off and have popped? I heard that's the only way you can see bocholism. I want to do this tomorrow Bec I'm still trying to get my mylars right. Due to lack of space, I'd like to be able to do both methods. Being new at something scares me.

    You can remove them but not necessary…. When you open the can leave it open 10-15 minutes in sink…. Smell taste appearance. You will know if bad! Thanks for watching

    Linda Wilson yes you can.... anything dry no cereal with marshmallows or things like that only dry goods. Flour cereal oats mixes dehydrated milk dry potatoes etc

    Fixing to do a batch but I was wondering did you do a wet bath with vinegar to clean jars on stove and then dry the jars in the oven?

    I usually just run mine through the dishwasher with a dry cycle. the oven heat itself will sterilize jar and contents.

    I have used your scenario many times as to what has value. I have used 1 gold bar for 1 hamburger. Most people get the point very quickly.

    I always use white vinegar to wipe the rims on my jars every time I can,r regardless of the canning method

    Hi! Just tried this method of dry canning and several of my jars of rice, beans, and pasta have moisture in the jars. Is this normal and will there be any issues in the future with mold or contamination?

    Afternoon Wendy…. I have seen this moisture as well in beans and pasta…. I have never had an issue after years and years. In my research you never get all the moisture out, but what is left is pure snd absorbed back into product…. I’ve got stuff 10 yrs that show no issue and test regularly. Thanks for watching

    Yes, it will dry any moisture in the jar if you process the rice without the lid. Sterilized the lids in a pan for about 15 minutes with no water. If the moisture in the jar is to high the stage is being set for Botulism

    @@angeliaparker496 I heat up my lids in the oven and the filled jars as it is humid where I live. If anybody has any concerns about botulism simply opening the jars and exposing it to air for a day or two should kill it. Funny thing is , I can’t find anything about an actual incident where people were getting sick from canning in this way.

    Can you just put the lids on the jars without putting the lids in water or you needs the moisture from the lids

    The water heats the seal on the lid so that when you put it on it seals properly…. I’ve heard people just putting lids on, but I was taught to heat in water so it’s what I do. Thanks for stopping by

    I have not, I would assume it would kill yeast...
