Not trying to be a jerk, at all (seriously), but when was the last time you heard of an American citizen (or even A Mexican citizen who isn't involved in organized crime) being beheaded anywhere? The cartels 100% GAF who you are. They run multibillion dollar organizations and political power alliances are critical. The African Americans who were recently killed in Matamoros were mistaken for Haitian competitors, and the (alleged) perps were turned over to law enforcement with a public apology. The last thing these organizations want is American governmental/military heat on Kidnapping, let alone beheading a random American tourist would be organizational suicide.

They really only do things like that if you’re in that life; otherwise they’ll leave you alone for the most part. Cases where this happens to others not in the life are usually cases of mistaken identity, which the people who committed the murder will get disciplined for bringing unnecessary attention. If I’m not mistaken, the last instance of Americans being kidnapped and killed, the ones that did it were murdered because they messed up.
