    so many beers... I have one in the fermenter now and 1 more close and 3 just orderred from Northern Brewery. I missed this one. I will have to try it

    I bottled this a few days ago, and while I'm waiting the few months to age, thought I would try and reclaim the oak cubes. Rinsed thoroughly, dried them out for 4 hours at 300°F, now what do I do to get to the package classification which said Oak Char #3. Char them slightly with a propane torch? Put them on a grill for 30 minutes?

    Question: I made the extract version of this. I may have let it sit in the 2nd fermentation too long because after bottling and letting it sit for several months there doesn't seem to be much carbonation. Is there a way to fix this?

    That's a tough one. Often these big beers require a second smaller dose of yeast (or something like CBC cask conditioning yeast) at bottling with priming sugar to make sure they do carbonate because the alcohol is so high. What temperature have the bottles been sitting at? One thing I can think of would be to get them somewhere warmer and rouse them a bit by gently turning them end over end to get the yeast that might still be in there back in suspension.

    A lot of Imperial Stout purists I know say not to even look at (let alone drink) the beer in the keg or bottle for at least three months. Like that is their minimum aging preference. You can give or take that advice of course. But, personally I feel like a month or two is good, especially since I like to track the flavor evolution as it ages -- so I start drinking them (in small amounts) a bit more fresh than other folks. I can tell you that the batch you see Brad brewing in this video was made late October 2022 and is really hitting its stride just now, eight months later. I think the extra months helped in this case because with Dragon's Silk the spirit and oak create additional flavors than need some time to round off the edges and come together. Part of the reason that if you have the capability it's good to keg some for cold conditioning, and bottle-condition a handful so that you can enjoy them much later without tying up the real estate in the keezer.     I've liked all the recipe kits I've gotten from NB except this. I cannot describe how awful this tasted, it was the only batch I ended up dumping.
