I, unfortunately, cannot get my queso tropical here in Washington State. But, I found out that I can use Mexican queso called Panela to do the same thing. When I fly out back home to NYC I stock up, bring some with me and have to explain to the TSA why I have frying cheese and salchichon.

Just watched Lidias kitchen on PBS and then again on you tube. She made frico: potatoes, eggs, and cheese, Italian. The cheese she used Asiago. She fries precooked potatoe slices, grates about 2 cups on a box grater removes potatoes and put half of the Asiago straight in that nonstick skillet (one of the reasons I came to you tube you can use cast iron, doesn't need to be nonstick) puts fried potatoes on top of Asiago 😋 adds eggs other half of Asiago. When bottom of frico slides around in skillet She inverts on a plate and cooks the bottom side I'm like never heard of Asiago. My phone has, I type asi and up pops Asiago 😄 now I see 2 more kinds of cheeses I can fry. Actually 3 as last night I roasted asparagus with Romano cheese omg so good and the Romano that dripped on bottom of pan was like chips, Romano cheese chip 😋 . Thank you, you answered my question along with your commenters. Ha ha ha 😂 chow Italiano and my nationality is a league of nations 😁👍lol

I put the queso in the center, then I fold it like an enpanada and I put to fry. Omg! It's so good with Arroz blanco and habichuelas. I fry the cheese before I put it the maduros sometimes. Try it! Using flour or corn starch depends on the cheese you are using.. She used queso de freir which holds it's shape when fried. If you use different type of cheese, like for instance queso blanco which looks the same, you will need to flour it first or else you are going to have a melted cheese patty.

Queso de freir and mozzarella cheese do not taste the same. Also when heated mozzarella becomes very stretchy. Queso de freir does not.

You can coat it with flour or cornstarch to help it hold its shape while frying. I hope this helps!

I had that brand a few times and others as well. It's horrible! Salty no flavor and process tasting. Its on the same rank as American cheese for me. I did find a brand that's amazing from a farm called Vaca Negra. Not salty, creamy, organic, earthly, nutty and everything done by hand. They have it under Queso fresco buts it's the same cheese.

So I have a 🙋‍♀️ question!! Yes pick me 🙋‍♀️🙋‍♀️!! Lol such a clown!! But anyways my question to you is why did you not use flour to or corn flour to fry the cheese? I’ve noticed cheese fries so much better with flour? My mom does not use it either and I was wondering if that’s because it is optional!!
