Ravva Kesari Sweet for Vinayaka Prasadas: A Divine Delight
Ravva Kesari, also known as Kesari Bath or Sheera, is a classic South Indian sweet dish that holds a special place in the hearts of devotees offering prasadam (sacred food) during Vinayaka Chaturthi or any other auspicious occasion. This delectable and fragrant dessert not only pleases the palate but also symbolizes devotion and tradition.
Ingredients:
Semolina (Rava/Ravva): The star ingredient, semolina, adds a delightful texture to the dish. It's roasted to perfection in ghee (clarified butter) before being used.
Ghee: Ghee imparts a rich and aromatic flavor to the Kesari. It's an essential ingredient for authenticity.
Sugar: To sweeten the dish to your liking. Adjust the quantity according to your preference.
Water: To cook the semolina. Ensure you use the right ratio of water to semolina for the perfect texture.
Cardamom: Crushed or powdered cardamom seeds add a beautiful aroma to the Kesari.
Saffron Threads: A few saffron threads, soaked in warm milk, give the Kesari its signature golden hue.
Cashews and Raisins: Roasted cashews and plump raisins are added for a delightful crunch and sweetness.
Preparation:
Roasting Semolina: Start by heating ghee in a pan over medium heat. Add the semolina and roast it while continuously stirring. Roast until it turns fragrant and slightly golden. This step is crucial as it enhances the flavor and texture of the Kesari.
Saffron Infusion: While the semolina is roasting, take a small bowl and soak a few saffron threads in a couple of tablespoons of warm milk. This will release their beautiful color and aroma, which will later be infused into the Kesari.
Making the Sugar Syrup: In a separate saucepan, combine water and sugar to make a sugar syrup. Heat it over medium heat until the sugar completely dissolves. Once dissolved, reduce the heat to keep the syrup warm.
Mixing the Ingredients: Now, add the roasted semolina to the sugar syrup, and stir continuously to avoid lumps. It's important to do this step over low to medium heat to ensure that the semolina cooks evenly. Continue cooking and stirring until the mixture thickens and the semolina absorbs the syrup. This may take about 5-7 minutes.
Flavoring: Add the saffron-infused milk to the semolina mixture. Also, add crushed cardamom seeds, which will lend a beautiful aroma to the Kesari. Continue to stir to incorporate these flavors.
Cashews and Raisins: In a small pan, heat a teaspoon of ghee, and roast the cashews until they turn golden. Remove them from the pan and set them aside. In the same pan, roast the raisins until they plump up. Be careful not to burn them. Add the roasted cashews and raisins to the Kesari mixture.
Final Touch: Continue to stir the Kesari mixture until it reaches the desired consistency. It should be soft and not too dry. The semolina should be fully cooked and have absorbed all the flavors of the saffron, cardamom, and ghee.
Offering as Prasadam: Once the Kesari is ready, it is traditionally offered to Lord Ganesha as prasadam. This is a sacred act, and it is customary to offer prasadam on a clean and pure banana leaf, symbolizing purity and auspiciousness.
Serving: After the prayers and offerings, the Ravva Kesari is ready to be served as prasadam to your family and guests. It's customary to share this sweet dish as a blessed offering from the divine, symbolizing the sweetness of devotion and gratitude.
Conclusion:
Ravva Kesari not only fills your home with a heavenly aroma but also satisfies the soul with its sweet and comforting taste. It's a beautiful way to connect with tradition and spirituality while sharing the sweetness of devotion with your loved ones during Vinayaka Chaturthi or any other auspicious occasion. This divine delight embodies the essence of Indian culture, where food is not just nourishment for the body but also a means of expressing love, devotion, and spirituality. Enjoy making and sharing this special treat with your family and friends, and may it bring blessings and joy to your celebrations.
