Is this sake, or moonshine, you tell me in the comments, I call it rice rice baby. My take on fermenting, and distilling sweet rice, and I think it turned out pretty good, the liquor tastes different but good, and in a great way.

    Most distillers: Everything has to be sanitized. PhilBilly: Lets mix this shit up on the garage floor and I'm gonna check it by grabbing a handful then throwin' it back in the pot.

    As you rightly said Koji is rice with mold growing on it (Aspergillus oryzae). Just to let you know the Shanghai Yeast Balls you have also contain Aspergillus oryzae so you can use them to make the rice wine without the koji rice.

    I'm running this now. Koji seems to react well with Kentucky mash.

    I've done several rice runs with YLAY. I did not use sugar or koji -- just YLAY from the start, & around 2 lbs/gal in the fermenter. Like you said, it's a very different product than traditional grains. "Creamier" is not quite the correct description on flavor, and a "thicker" mouthfeel vs grain whiskey. Not bad, just... different! Oaked is a very unique spirit. FYI it makes a killer neutral spirit.

    after a while i noticed it had a fruity floral flavor to it, I am really starting to like it, and considering doing some more rice based mashes.

    ​@philbillymoonshine7356 my family has been distilling this rice for years, it's our favorite! Straight up clear, I've been trying them out in those oak spirals to "age" and I gotta say it's a unique taste. Shine on brother!

    Yes, amylase breaks down starch, and rice has a lot of it.
