Dill Pickles - Water Bath Canning

Never Fail Dill Pickles
For each quart of cucumbers or baby carrots:
1/2 cup white vinegar
1 1/2 cups of water
2 cloves of garlic
As much dill weed as you can put in the jar and still leave room for cucumbers.
1 TBSP coarse salt
Boil water, vinegar and salt together and keep on the simmer. Pack the dill weed in the jar, add garlic cloves and then pack in the cucumbers. Add extra dill to the top if desired. Pour the vinegar mixture over the top and seal immediately. Put them into a hot water bath canner. Adjust the depth of water to insure you have full inch of hot water over the tops of the jars. Bring the water to a full rolling boil and set your timer for 10 minutes up to 1000 feet and 15 minutes over that. When the time is up carefully remove the jars from the canner and cool on the counter. Remove the rings, check the seals and store in a cool dark place. Ready to eat in 4 - 6 weeks.

    Hello Marie, I do to! It is an interesting old book because we I collected recipes from some of my family, collected some from recipe books and then before one of our family reunions one of my cousins asked each family for a recipe which she compiled into a small cookbook. I just added my collected recipes into the book and boy it has been used alot. I will have to use it for other recipes to share. Take care, Colleen

    @@StockingMyPantry It totally is, I know it doesn't sound very appealing but when I make this recipe, I think of her in her tiny little kitchen, with everything crammed all around her, sweat running off her in rivers and still she was one of the most beautiful women I ever knew.     Question. I see your brine is 3:1 water to vinegar. Every Ball recipe I read says equal parts vinegar to water. Is less vinegar acceptable for long term shelf storage? Thinking about that dreaded botulism. Thanks.

    For long term storage I would follow the Ball recommendation. I usually make batches of 6 to 8 at a time and end up sharing them before 3 months are up. Take care, Colleen

    Coleen you didn't top and tail the last jar and a half, left the blossom end on, first jar is good, and half of the second jar you top and tailed, but then forgot after that, oh well, these things happen. No problem, they'll taste good anyway! TFS.

    You can get a magnetic at harbor freight. Mine is metal for car work since I could not find the plastic one when I needed it.

    If you’ll cut the tops and bottoms of the cloves then put them in a jar and shake them, all the paper peelings will just come off and you won’t have to stand there and peel them. I just think it’s a bit easier.

    I’ve canned dill pickles twice now, and I have had the same issue both times; I keep ending up with twice as much brine as will fit into my jars. I already half the recipe because I’m using pint jars, but still have way too much brine. My concern is that I won’t have enough salt or vinegar in the jars. Anyone know why this might be happening to me, or if it will be a problem with the shelf stability?

    It seems we all over estimate the brine but it should make a different. The equivalents haven't changed. I put excess brine in a jar in the fridge and use it to quick pickle or make refrigerator pickles.

    You should always sterilize your canning jars whether you are water bath canning or pc because not all bacteria visible to the eye and if you are putting food inside the jar and there is bacteria in there you are in trouble. Cheers, Colleen
