This is amazing! Every time I think this is the best, you conjure up something better. How do you do that?

Very interesting techniques, I would have never thought of mixing water with the spice blend for example. I can imagine that making the spices much harder to burn. Also the onion coriander chili puree was new to me, reminds me of a Chinese technique where they make something very similar but with green onions and ginger. Very helpful video, thanks!

In Maharashtra, Coriander, onion, Green chilli paste is first stage of cooking chicken. Fried onions, coconut, ginger, garlic paste is second stage, and third stage is adding spices. Once search Khandeshi chicken curry, which is part of north Maharashtra.

Love this Chef-he washes the chicken, which is a rarity in food prep vids nowadays. Imagine that the chicken has been handled on many surfaces and the butchers knife has been going nonstop?! I did not even mention other processes, especially in Western societies. Appreciate you Chef Ashok!
