Nick and Angela welcome an OG Derry girl to Dish HQ.
Saoirse-Monica Jackson grew up in Northern Ireland and studied acting at the Arden School of Theatre in Manchester. She is best known and loved for her portrayal of Erin Quinn in the Emmy award-winning series Derry Girls. Over three seasons the 90s-set comedy became the most popular show on Channel 4 and is now a hit with a global audience on Netflix. It wasn’t long before Hollywood came knocking and Saoirse won a role in the DC superhero movie The Flash. She is currently starring in period drama The Doll Factory on Paramount+ and later in the year will also appear in The Decameron, based on Giovanni Boccaccio’s 14th-century collection of comic short stories.
Nick kicks off proceedings with a bottle of the Waitrose loved & found Nerello Mascalese rosé while Angela puts the finishing touches to the best lasagne; a recipe by Martha Collison. As our trio tuck into their meal, they enjoy a delicious glass of the Waitrose loved & found Lacrima and discuss the pitfalls of planning a birthday party, Saoirse-Monica’s favourite snacks and Derry Girls the Movie.

The algorithm did me sooo good tonight but also I almost died. The "kids in jackets" while I was taking my magnesium pill made me choke and spit my water. I would've died laughing 😂

Funniest line - Saoirse: “Like little kids in Leather Jackets!” meaning something is quite wrong - out of place! I agree! Brilliant actress! Brilliant as in fantastic, but also brilliant as in, I really like how her mind works - how quick she is and she just naturally thinks in metaphors! I think her mind works with visuals more than linearly with language. Yet, she is so obviously well-read! Derry accent so strong I had to put “CC” text on. Lasagne recipe sounds amazing! Hand dice the beef/pork for texture and make the sauce/meat ragout a day ahead to let flavours meld (plus I just can’t stand on my old pins, in a kitchen all day, making a lasagne!). Make a béchamel sauce (Okay, why not - but, I never put that in a lasagne!) And put any parmigiana cheese wheel rinds to simmer in the bechamel sauce and the ragout to add “Umami” - that “Je ne sais quoi” which transports it into the fifth dimension of flavour! Thank you Angela! I love how casual you are about the cooking - as if it’s just an aside to the real point of meeting up- the conversation! But no, the food is always central to the event - and I so do envy all your guests!
