2 lbs whole shirmp poached in shrimp stock
2 tb minced grilled onion
2 tb minced grilled sweet baby bell peppers
1 tb minced cilantro
Salt and pepper
Tortillas:
2 cup dry corn
2 ts nixtamal
Shrimp paste:
Shrimp heads fried in avocado oil
2 tb of shrimp oil
2 cloves raw garlic
Shrimp Stock:
Shells from shrimp
1 onion
1 celery stock
1 carrot
Salt and pepper
Enchilada Sauce
2 ancho chile
2 chile guajillo
2 chile de arbol
1.5 cup broth made from shells
2 cloves roasted glaric
2 tomatoes
½ roasted onion
1 ts shrimp paste made from fried heads
