Delicious OXTAIL SOUP Recipe that FALLS off the bone | Nom Life Recipe

Check out the Ko family oxtail soup recipe!
Ingredients:
4-5 oxtails (a mix of small and large ones)
Beef bones (Either 1 femur, or some chopped up rib bones with some meat on them)
1 large white onion
1.5 heads of garlic
1 inch piece of ginger
1 bunch celery
1 package carrots
2 medium russet potatoes
2 large tomatoes
Soy sauce (dipping)
Sesame oil (to taste)
White pepper powder (to taste)
HOW TO DO IT
Bring 3/4 of a medium-sized pot of water to boil
Once boiling, add the oxtail and bones and let boil for 20 mins
Next, scoop off the scum that comes up to the surface. Toss that funk down the sink.
Cook for 90 additional minutes.
Aromatics:
Quarter the onion, peel the garlic and slice the ginger and toss it all in. Let boil for 90 minutes while stirring occasionally
Phase 1 Veggies:
Cut the celery and carrots into inch long pieces and add them to the mix. Boil for 45 mins more, stir occasionally
Phase 2 Veggies:
Cut the potatoes and tomatoes into medium sections and throw em in. Boil for 30 mins, stir occasionally
Add in salt, sesame oil, fish sauce and white pepper powder to taste; then stir up good
Use soy sauce as dipping for the oxtail.
Special Notes:
*Once you have your ingredient prepped, check to see if it can all fit into one pot. If not, you can freeze half of it for a future batch.
*Before you get started cooking, make sure you got a new show that you can binge. It takes about 3 hours total. The key is to add the ingredients in the right order, at the right time. Or the texture gets all messed up. You don’t want the potatoes to be too soggy. That shit wack.

    1 small tip, if you brown the oxtail 1st before boiling, it will give an even deeper and rich flavor. you can even do it in the same pot and not wash it and maximize the flavor you can get.

    @@markoliver4194 I use a couple tablespoons of cooking oil - something neutral, medium heat. Wash and pat dry the oxtails (to brown, meat must be dry,) I season my oxtails before browning-my personal preference is salt, pepper, garlic powder and onion powder. I place the oxtails in the pot, and turn them so each side gets a pretty medium deep brown color. Possibly 15 minutes total to let each side get nice and brown. DO NOT wipe out the pan - you really do want the brown pieces in the pan, as you add liquid, gently stir the brown bits at the bottom. It adds a meaty richness that is hard to explain-its just a depth of rich flavor.

    That looks so delicious. I haven't eating oxtail for many years. My late mother used to always cook oxtail stew for dinner and the meat was cheap back in the day. I was a teenager then. Nowadays, it's too expensive and I just don't want to spend the amount of money per pound. After seeing this video, I believe this precious meat will be worth spending for the sake of this fine recipe. It's been over 20 years since I had oxtail. I thank you for that.     This was my childhood fave! It’s 90 degrees out but I’m still gonna make it. Also, I love adding tobasco in it. Has a nice underlying tangy heat that goes so well with the tomatoes.

    @@chrisgameing9045 I don't think it ended up happening. But I made it for my landlord and she loved it. I got a divorce from a 7 year relationship and I am now going through the emotions of trying to get my life back in order. The good news on that end, is that my business is taking off and I am actually doing well financially for myself. So. Hopefully in time I will heal for this and find the right person.

    After scouring the web for ideas on oxtail soup I came across your recipe. You had me at fish sauce and sesame oil. A devine match made in heaven🤪. It was a long drawn out battle. The meat was unyielding, and quite attached to the bone . Nevertheless, I was patient . Man, oh man it was well worth the wait! Delicious is an under statement .     This is my favorite, my family is Honduran so we add corn, yucca, cactus if we have it and zucchini. Serve with lime slices, Louisiana hot sauce and a big bowl of rice. Stew until the potatoes become soft and yellow. Top with cilantro, parsley. Also brown the meat in the pan first to make that deep delicious broth have so much more flavor.

    How did y’all know I was craving oxtail soup? Think I’m going to make this for Father’s Day coming up! How many servings would you say this is? If I wanted to make a bigger batch any particular modification tips you’d recommend or just multiply everything?

    This makes 8-10 servings (or 4 servings for my very hungry brother lol). Wow that's so nice of you for fathers day! We've never made it bigger than this since it's the largest pot we have, but there shouldn't be issues multiplying the amounts. The levels of salt, sesame oil, fish sauce, and white pepper powder are to taste so having a heavier hand there would be important!

    Aromatic includes garlic... Not mentioned in video. Add the salt and pepper with the first set of vegetables or even before to ensure the spices penetrate into the meat and veggies by the time they are cooked.

    P.S. While I wholehearted agree with some of you guys that browning the meats in various dishes adds flavor and depth and umami to the dishes, and I just about always do, especially in stews and roasts and such, but keep in mind that this dish is designed to be on the lighter side, almost like an oxtail variation of chicken noodle soup - something like a comfort food. In other words, this recipe omits the browning step by design, not out of negligence. Therefore, if this lighter version is what you're going for, then browning isn't necessarily a step you want to include. It really just depends on what type/style/flavor of end product you're shooting for.

    Looks more like stew. I've never seen it made with potato carrots and celery. Oxtail stew is good but the flavor differs enough to eat it for different occasions. Soup is more of a rainy day dish.

    The difference between stew and soup is liquid consistency. Stew is thick, soup is watery. This is without a doubt soup and not stew, although it contains veg that you might associate with stew.

    No, it doesn't fall off the bone. After five hours in a slow cooker, it NEVER falls off the bone. You have to take the pieces out and slice off the meat yourself. But it's worth it, because it's delicious.

    Not quite sure, we always eyeball it! But we think that 3 large oxtails and 3-4 small/medium ones is the right amount. Sounds like ~1.5lbs

Just a small correction: I believe you meant to say "1.5 heads of garlic"" (each head contains many cloves; on average ~10 or 12 cloves), and not merely "1.5 cloves of garlic." Right? While people can use as much or as little garlic as they prefer in just about any dish, it's nevertheless important to clarify this in your recipe, since "1.5 cloves" of garlic that you said in the video is only about 1/10 of what appeared like the 1.5 heads of garlic that you actually used. 😅

    leave the scum there if you like a cloudy soup but removing the scum gives you a clearer soup it all depends if your lazy or picky

    Looks delicious! I have a question about the amount of garlic needed. In your printed recipe & this video, I see 1&1/2 “heads” of garlic (like each head has maybe 15-20 cloves on it). But in this video, you mention “cloves”. You said, “you can never have too much garlic. In this soup, we use 1&1/2 cloves”. Wait. Huh? That’s not even that much. I’m confused; is it 1&1/2 cloves of garlic or 1&1/2 heads of garlic-2 entirely different amounts. Now 1&1/2 “heads” of garlic would be a healthy amount! Lol. And maybe this IS the amount you meant to say in the video? Maybe you misspoke in the video. Pls clarify. Thx!

    When I was an aircraft mechanic, I was shocked to see this ex-US, Veteran living the way my grand parent's used to live. 🤔 He didn't waste anything. He ordered this band saw from Harbor Freight. It was his meat saw. He wouldn't even waist the leg bones. Damn it all, understand this man not only had a family to feed. He never had no Dogs at least to my knowledge.

    you’ll want to blanch the meat and marrow before cooking. and the tomato juices are the best part of oxtail soup :(
