Hey guys!
In this video, I show you a DELICIOUS doctored cake mix recipe. It's so easy to do and is so moist and flavorful! Based off of a popular recipe by the amazing Rebecca Sutterby.

Baking Nails (heating core) - amzn.to/2G4rwJ5

Recipe:
1 Box Cake Mix (I prefer Betty Crocker)
1C Flour
1C Granulated Sugar
1C Whole Milk
1C Sour Cream
3 Eggs
1T Clear Vanilla (I love Wilton)
Pan Grease Recipe:
1 cup Shortening (I use Crisco)
1 cup Vegetable Oil
2 (or more) cups Flour
Mix together in Mixer until creamy. Add more flour if it's too runny, add more vegetable if it's too dry. I will be posting a video next on how I make this!

    For anyone doubting this recipe, I just wanted to say, please give it a try. You definitely won't regret it. Also,as I do a lot of cakes, I buy sour cream by Daisy, in the 5lb or 3lb tubs, save these, as a 3lb tub will hold 1 batch of the buttercream frosting that Karolyn had as well. So I spend one day, baking cakes, and making frosting, and making fondant, that will last me a week or two, depends on how many cakes I have going out. I I can just spend the rest of my time on Decorations. Makes it so much easier as a home Baker.

    Wow. Just WOW! I made a wedding cake today with this hack, and it was AWESOME! I cannot thank you enough! I used Betty Crocker French Vanilla and followed your steps exactly! What a lovely cake and the layers were sturdy enough for a tiered cake. I filled the layers with lemon curd and raspberry jam. Frosted with Swiss meringue buttercream. Amazing!

    Wow I want to try this. I have now made several cakes from scratch. I have followed directions to the letter and they come out denser than I would like. So this sounds like a fantastic way to get great results

    Yes! What I didn't mention in this video is that after you add all of the ingredients, mix it on medium high (5-6 out of 10) for 90 sec to 2 minutes. The cake will bake much better when you beat the air into it!

    I just attempted this for the second time today, and despite still needing to work out the optimal amounts of batter for different size pans, the taste and texture were great! I’m experimenting using the Betty Crocker vanilla. Once I nail down how much to fill each size pan for my oven, I will do my vanilla cakes this way a lot of the time. It saves a ton on butter and a lot of time! Thank you so much for doing these awesome videos!

    I just tried this recipe hack and let me tell you, THIS IS AMAZING!!! This is definitely a step up from just a cake box mix itself. The cake held together way better than just the cake box mix. I also added instant pudding mix and it’s great too. I recommend this recipe. THANK YOU KAROLYN!! Update: My family just tried the cake and they can’t stop talking about how good it is. 😁

    I just love your channel and your infectious smile and laughter! I’ve started using your Doctored cake mix and it is amazing! I’ve never made a 10” cake before and even with the nails in the center it took like 73 minutes and I could still see a few very small spots not completely done in the center! I baked at 325 should it have been a higher temp? Attempting my 1st wedding cake this week! 🤞

    I did this recipe today. I'm making my birthday cake that is next weekend. Let me tell you....I used 1 batch and I only used 2 6 x 3 inch pans. The rise I got was amazing and I'm so excited to take this out of the freezer Friday to make it a drip cake with Chocolate strawberries. I do bake from home, I am new, I am in baking and pastry school and even with the knowledge that I have so far, still being new to baking, this recipe is the best I have tried. Thank you so much!

    @@KarolynsKakes yes you really nailed it!! I found you by looking at your mini cake video. I struggled sooo bad with my first. Didn’t realize how much more difficult they are than bigger cakes! Hoping today is a better day, I’m taking all your tips! Question for you, I feel like my biggest downfall is wanting to do to much in one day. How many days ahead of time do you decorate a cake? I always feel like if I make it too far in advance it won’t taste “fresh”

    @@rosemaryolavarria881 I feel like that is the biggest worry that people have. Believe it or not, I bake / freeze on Saturday, fill on Sunday, ice on Monday and decorate Tuesday - Friday for that weekend. And with my doctored mix recipes and how I store the cakes, I've rarely had anyone who had an issue with the texture. Freezing the cakes after you bake them really helps seal in the moisture. Icing the cakes before you refrigerate them helps prevent them from drying out. I've even had people keep the cakes in the refrigerator for another week for a postponed party and the cake was fine!

    Hi Karloyn! I’m new to watching your videos, and I absolutely love watching them. Any chance you can give a standard recipe for making a vanilla cake from scratch? I’m looking to try using the sour cream and milk in a scratch cake, but have no idea of the quantities of other ingredients that would be needed lol.     I just made two batches of this cake today. Both came out great. I used four eggs instead of three. I used cake batter extract and vanilla. I also have cream bouquet which I think is the same as your cake batter. It comes in similar bottle and 32oz. 😋.

    @@KarolynsKakes it is McCormick. It is delicious. I buy it at my local supermarket. I believe Walmart sells it as well. I also use clear vanilla from Mexico. It is organic. I have yet to try other brands of clear vanilla.

    Hello Karolyn. Girl! I'm going to try the lemon cake and the carrot cake. I do bake from scratch. However, there was a sale on the Duncan Hines Supreme Cake Mixes for .75. Yup, I enjoyed that sale. I came across your channel and thought I would give this a try with Duncan Hines. I like that you add the fats from sour cream and whole milk. So, here goes! Have you ever swapped out the whole milk for buttermilk? You Rock! Thank you for sharing your knowledge. If this works, I'll buy you 2 cups of ☕️! I will follow up.😊

    Sour cream is acidic, and so is buttermilk. If your cake is too acidic, there may be issues with it browning correctly. If you swap the milk for buttermilk, please let me know how it turns out! Also, from my personal experience, whenever I bake with Duncan Heinz, a hard crust forms on the top. Not a big deal because I level it and don't use that part. But just wanted to make you aware that could happen. Let me know how it turns out!

    @Karolyns Kakes thank you for responding so quickly. I didn't know about that acid issue. I bought whole milk to be on the safe side. I normally use Duncan Hines for cake pops, so I'm excited to try this out. I'll keep you posted. 😊

    Ok so I ended up doing funfetti and vanilla. Loved the flavor and the texture. I do need to purchase some nails though my center were a tiny bit under baked. Over all delicious. 👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻. Today I am trying strawberry since I found that video too. Thank youuuuu!!!

    Heavy cream has a high fat content, which could make the cake too dense. Maybe try 3/4 cup heavy cream and 1/4 cup water and see how that works? If you try a whole cup of heavy cream instead of the milk, please let me know how it goes!

    Years ago, my friend's kids had an egg allergy. So I used a powdered egg substitute in place of eggs and it worked great! It was so long ago though, so I don't even remember the brand I used. Bob's Red Mill has one you can try though!

    I wanted to take the time to leave my experience with this recipe. I have always wanted to know if there was a way to use box cake mix and make it taste and look like a “scratch-made” cake. I have the perfect vanilla cake recipe and I use it all the time. Never fails me. However, I wanted to know if a doctored cake mix recipe would work just as well. So I came upon this recipe and thought I’d give it a try. I love Karolyn’s videos, tips, decorating ideas, etc., so I tried it. Here is my take on it. Does it work? Yes, it absolutely does. It makes a very moist cake and sturdy enough for your average cakes. The taste was good, better than straight from the box, but didn’t exactly have a “homemade” taste. But definitely better than the mix alone. Is it cheaper than scratch? Well, not exactly. But that would obviously depends on the cost of items in your area. My tried and true vanilla cake recipe cost me $3.86 per recipe. This recipe cost me $4.67 per recipe. Now that not a lot. But if you can make homemade for less, and it tastes so much better, then I don’t see choosing this recipe as a go to. Would I use this recipe again? Yes, absolutely. It’s a great cake and is easy enough to use with a multitude of flavors. No matter what flavor cake mix you have, this recipe works. That’s genius on it’s on. However, I would only use it if I found the cake mixes on a deep sale price, which it does quite often. So if I could buy the mixes when they are cheap, then I would definitely use this recipe. The things I found that didn’t work for me was wrapping the cakes while they are still warm. Did it keep the cakes moist? Absolutely! But I found that the tops of the cakes get very “sticky” when unwrapped. I’m assuming due to the trapped heat. Doesn’t really ruin the cake, especially if you’re leveling them anyway. But I find if you let them cool completely in the pan, and refrigerate them for at least 2 hours, then bring them to room temperature, they should be perfect. Also, if I compare it to my recipe, you cake bake 2 8” round cakes with both recipes. However this recipes layer bake at about 1 inch when leveled at the crown, whereas my recipe yeilds 2” layers when leveled at the crown. So homemade is cheaper, tastes better and yeilds a taller layer. But like I said, I will definitely use this recipe again, for sure. I will say I won’t use it for cakes that require a lot of sculpting. The crumb in this recipe isn’t “tight” enough in my opinion. But this is definitely a great recipe. And the options and variations alone are enough to keep me using this recipe!

    Yes! I make cupcakes all the time. 1 batch yields 36-42 cupcakes. I bake them at 350 for 15-17 minutes.

    I’m going to try this cake mix hack this weekend for Halloween cupcakes and I’m curious to know have you ever tried using buttermilk with this recipe? I just started baking as a hobby and I only have used buttermilk in cake recipes and I love how moist it makes my cakes. Would it work with this recipe even though it calls for sour cream as well?

    The sour cream and buttermilk are both acidic and basically do the same thing (makes the cake soft and moist). I personally have never used buttermilk in my cakes. But if you try this with buttermilk, please let me know how it turns out!

    Hi! I love your videos, if you haven't put me all together I've asked questions on several different videos. Hopefully, I won't bother you to much, the big weekend is this Saturday, the 29th of Jan. One of my 12" cakes is white, the other side is chocolate; do you ever do anything different on white cake, since you are not suppose to put in the egg yolks? Also have you ever used cake flour vs all purpose flour? What difference would it make to use cake flour? Thanks again for all you do and the great instructions!

    Hey Mindy! With white cakes, I do my recipe but I add 4 egg whites instead of 3 eggs. It’s still moist and delish even with the yolks eliminated! I tried using cake flour years ago and I hated it, I tossed half the bag. I can’t even remember what happened and why it didn’t work. I just didn’t like the result so I stick with all purpose flour. 😊

    Hey! For wedding flavor, I do this exact recipe, adding vanilla and also 1-3 Tablespoons of the wedding flavoring depending on how strong you want the flavor to be. It's so good!

    Not at all! After baking, you don't have to refrigerate. I prefer to refrigerate my kakes as it's just easier for me to work with them. But it's not required. :)

    I have 7x3 inch high cake pans. Will this still work if I divide the batter into 3 of those pans? Or would I have to purchase new 2 inch high pans? I’m planning on following your double barrel cake instructions to bake a cake for someone but don’t have 2 inch high pans.

    You don't have to purchase new pans! You can just fill the 3" high 1/2 full and get the same result.

    Hi Karolyn 👋🏽 I bake custom cakes as well from scratch and I have yet to find a recipe that is moist for any cakes bigger than a 6 inch.     Hi there: Love your easy to follow videos. I need to make 200 cupcakes and I will be using this yellow cake recipe. That's the easy part. She wants the cupcakes decorated with white frosting, no problem. but the decorations in the colors black and gold with a touch of green, But she says absolutely no fondant. (I hate it too) Have you done any black decorations that's NOT FONDANT. I'm hesitant to do to much black because you don't want the quest ended up with black lips. lol Thanks for reading this, just trying to get your opinion. Keep make those beautiful cakes.

    Just found your videos. I am newer to baking and love them. Thanks!!! 2 Question for my daughters bday cakes if you can. I want to try this box hack. I am making 6 layer rainbow cake and needing to use food color on each layer. First with white cake they say use egg whites. Do I need to alter the recipe? Also my practice cake straight box, the layers started to fall into each other. I quickly refrigerated and it helped. Will this cake hold up to so many layers. Thanks!!

    I always do rainbow cakes from this yellow cake. If you want more vibrant colors, you can do it from a white cake. I don't make white cake though, I just don't like how it turns out. When you say "practice cake straight box", do you mean that you made your practice cake using the box recipe, and not this doctored mix recipe? When I make rainbow layers, I make the layers thinner so it doesn't collapse!

    Thank you for the quick response!!! Yes. My practice cake was made from a box white mix. Called for egg whites on the box. I have not yet tried the hack but really want too. I didn’t realize I could rainbow layers with yellow cake. I will try it. Plan to measure layers this time to help with collapse. Thanks again!!

    I noticed the fan running in the back of your oven. Do you use the speed bake feature or just the regular bake temperature feature?

    It runs when it heats up but stops when it gets to the correct temperature. I don’t use the convection fan for baking these doctored mix cakes. I feel like they bake too fast and can dry out!

    Have you tried the Metro beater blade? Unlike the Kitchenaid paddle attachment, it has padding all the way around the paddle. I find it works 40x better than the Kitchenaid paddle at scrapping the bowl.

    Yes I've tried them before and I just don't like them. They create a mess (in my opinion) and I just prefer to scrape the sides and bottom myself. But I know a lot of people swear by them!

    @@KarolynsKakes I kind of didn't understand you at first, but now I do understand how it can create a mess with powdered sugar, flour, etc, especially in smaller mixing bowls. I use a KA 600 and the bowl is taller and wider than the Artisan’s. It has a slow-start mode so I don't experience too much fighting back. Thanks for answering me.

    I use 2" high pans. An I fill 3/4 of the way full. 1 recipe will fill up to an 10" pan. Or one 9" & one 4", or one 8" & one 5", or one 7" & one 6"/

    I use Rebecca’s recipe every time I make cake (of any flavor) I however use 1 box mix, 1c flour, 1c sugar, 1 1/3 c water, 2Tbl oil, 1cup sour cream, 4 egg white or 3 whole eggs, 3/4tsp salt, and extracts. I’m interested to try your way with 1 cup of milk. Have you ever used the water and oil recipe? If so how does it compare to using milk instead? Thank you!

    All purpose flour. I tried cake flour before and didn't like how it turned out. I don't remember why I didn't like it but all purpose flour yields the best result!

    Ahh! I should have mentioned that, thank you for asking! For cupcakes, I bake at 335 for 17 minutes. That seems to be the best temperature and time for my oven. You may have to try between 16-18 minutes depending on how accurate your oven temperature is.

    To make two 8" x 2" cakes, it requires 1 1/3 of the recipe. So to make four 8" x 2" cakes, I would use 2 2/3 recipe. I show in this video how to break down the recipe according to what size pan you're using so you don't waste a lot of batter! kzread.info/dash/bejne/d39l0bWJeLW7orQ.html

    Hi karolyn! I have tried this recipe many times and the cake always comes out super yummy, but every time I try it my cakes always sink in the middle and the cake texture is very thick and doughy in the middle, is there a way I can prevent this? Has this happened to you?

    Hmmm, that hasn't happened. Do you use a heating core (nail) in the middle? Also try mixing it on a 5 or 6 out of 10 for 90 seconds to whip air into it. And never let the batter sit for more than 5 minutes before you put it in the oven.

    Correct! It's not needed because we get the fat from the milk and the sour cream. If you don't want to use sour cream, you can use full fat greek yogurt.

    Yes you can! You may have to reduce the temperature to 325F and bake for 50-60 minutes

    That sounds interesting! I don't see why there would be a problem with that as you can use creamer in place of milk. If you try it, let me know how it turns out! And I don't sift the flour, I just make sure I mix the flour before I scoop it. You can absolutely sift it if you prefer.

    Do you wash the brush you use for your pan grease every time you bake a cake?

    I wash the brush after every use. I don't wash it after every time I brush the pan, because I can make 25 cake layers in a day. I will use it for the day, and then soak it in water with Dawn dish soap in it. Then really get in between the hairs and run it under hot water and get all of the grease out.

    @@kenyajames1931 you can use other flavors! I have used almond and a wedding bouquet flavor instead of vanilla and it’s delicious!

    You can definitely use a vanilla mix instead! And just do the same recipe with that.

    I have used Pillsbury before. I just prefer the way Betty Crocker bakes. I like the flavor and texture better than Pillsbury or Duncan Heinz.
