Delicious Candied Nuts | Great snacks and pastry decorations

OK, this is one of my “Pastry 101 videos”!
Caramelised nuts (or candied nuts) are great as snacks, especially for kids! But they are also used widely as decorations for cakes/cookies etc.
Please enjoy!
▶Candied Nuts◀
Almond or any other types of nuts 125g
Sugar 40g
Water 10g
Butter 5g
① Add water + sugar into the saucepan and raise the temp to 115℃ to make a sugar syrup.
② Add in the nuts and mix well.
③ The sugar will crystallise over the nuts - keep mixing it with your spatula and the crystallised sugar will turn into caramel.
④ Turn the heat off when you have the perfect brown colour coated on the nuts.
⑤ Add the butter and mix well.
⑥ Place it on a silicone mat/parchment paper and let it cool at room temp.
Storage: Can store in an air-tight container in the fridge for a month.

    I’ve watched a lot of Videos on making these yours is the easiest and best so simple and so good. I like Rachel Ray but she poured her mixture on the nuts and hardly got anything to stick putting everything in pan so much better You really are a great chef. Thanks for the recipe

    I have tried your method out 2 times now and they always turn out perfect😆😆 These nuts make really delicious toppings🤩 And I didn't have a thermometer so I kinda guess the part 😂just have to wait until it's bubbling and the color is still transparent.

    hi Hanbit, this reminds me of " Gebrannte Mandeln' in Germany always during Xmas time, sometimes they add spekulatius spices to the caramelised nuts ! I will try to make this , should i roast the nuts first - if yes how long ?

    Do you know if we can we store pre-glazed walnuts (from grocery) in the freezer? The Fall Season is coming up so sale prices are very low on specialty nuts, but I don't want to stock up if they won't stay fresh for 2-6 months. Even the AI-answer programs are stumped on this question! Thanks.

    I tried doing this with peanuts , when they are crystallized they do not become brown as you showed in the video , and if I raise the heat, the peanuts burn , what should i do ?

    I would recommend NOT double/tripling the recipe as given. Or if you do want to do a large batch do it in a frying pan not a pot. The nuts need to have as much surface area as possible to get past the crystal stage. I had to remove 2/3 from the pan and crank the heat to its highest setting while stirring frantically lol! Do it in batches or use a massive sauce pan if you want to do a large batch. I added cinnamon and they taste fantastic. All the extra time caramelizing seems to have toasted them as well and they almost taste like popcorn!

    @@HanbitCho I didn't see your reply til after I made them but my suggestion is to not make them following this method if the cashews are pre-roasted. I made the caramel first and added the cashews during the final minute or so of cooking and they quickly started to over-roast. So I'd suggest only adding them once the caramel is ready
